Learn how to make the authentic vegan sacher cake

  • 70 milliliters of vegetable oil.

  • 1 tablespoon of apple cider vinegar.

  • 160 grams of raw cane sugar.

For the filling

  • 200 grams of peach or apricot jam.

For the ganache

  • 100 milliliters of pure coconut milk.

  • 200 grams of dark chocolate.

Steps to follow for the preparation of the vegan sacher cake

Preparation of the biscuit

  1. In a wide and deep bowl or container, sift the wheat flour, followed by the cocoa powder and add the baking soda and a pinch of salt.

  2. Mix everything very well with the help of some metal rods until everything has been perfectly integrated. Reserve the mixture for a moment.

  3. In another large and deep container, pour 215 milliliters of vegetable oat milk, followed by 70 milliliters of vegetable oil, a tablespoon of apple cider vinegar and finally the raw cane sugar.

  4. Stir all the previous ingredients with the help of metal rods until completely integrated.

  5. Pour the liquid ingredient mixture over the dry ingredient mixture you reserved in step 2.

  6. Mix everything until you get a moist and homogeneous chocolate cream.

  7. Preheat oven to 180 degrees Celsius with heat up and down.

  8. Prepare two molds with waxed paper or grease them with vegetable oil and divide the mixture equally in both molds. Give the mold a few bangs on the table before taking it to bake.

  9. Take the molds to the oven and let them bake until you notice that the mixture is firm. To check that the biscuit is ready, prick it with a toothpick and if it comes out clean, it will indicate that it is ready to be removed from the oven.

  10. Wait for the cake to cool down and place the parchment paper on top and a board to turn it over.

  11. With the help of a knife, separate the cake a little from the mold and remove it.

Preparation of the ganache

  1. Chop 200 grams of dark chocolate and reserve in a separate container.

  2. In a saucepan, pour pure coconut milk and heat on the stove over medium heat, stirring constantly to prevent sticking.

  3. When you notice that the milk will break to boil, remove from heat.

  4. Pour the pure coconut milk over the chocolate and stir constantly until the chocolate melts.

  5. If you notice that the chocolate is still not completely melted, take the container to a bain-marie while stirring repeatedly until the chocolate has finished melting.

  6. Reserve the ganache once you're done.

Assemble the cake

  1. Once you have the biscuits ready and flattened, arrange the first biscuit on the plate where you will serve the cake and cover the surface completely with a layer of jam or apricot.

  2. Very carefully, place the other layer of the cake on top of the jam, making sure that it is well centered with the other base. Press a little so that both biscuits are well attached to the jam.

  3. Pour the ganache over the top biscuit and spread with a spatula to flatten. Then drop the ganache over the ends and with the same spatula, smooth the edges.

  4. Put the cake in the fridge for at least 5 hours for the ganache to harden.

  5. After 5 hours, you can remove the cake from the fridge and serve.

    How to preserve the vegan sacher cake?

    Vegan sacher cake can be safely stored outside the refrigerator, but only for a few hours. This is because if left out of the refrigerator for too long, the ganache can turn bitter.

    A good option is store it in a glass or plastic container, or if you like in a bread basket, but only for a couple of hours. Later, it is better that you keep it in the same glass or plastic container, but inside the refrigerator.
