Learn how to make an authentic vegan cake

  • 1 teaspoon of vanilla paste.

  • 300 grams of all-purpose common wheat flour.

  • One and a half teaspoons of baking soda.

For the cream:

  • 500 milliliters of very cold vegetable cream. (Keep it refrigerated before using).

  • Strawberry and lemon food flavorings.

  • Pink and lemon green food dyes.

Other ingredients you will need:

  • Jam for the filling.

  • Sprinkles and sugar pearls.

Steps for the preparation of the vegan cake

Preparation of the cake:

  1. Pour the panela into a large bowl, followed by the coconut oil, coconut milk, apple cider vinegar, lemon zest and vanilla.

  2. Then, mix everything with the help of the electric rods until everything is perfectly integrated.

  3. Sift the wheat flour over the bowl, followed by the baking soda. Use the electric rods again to proceed to beat everything, until there is a homogeneous and thick mixture, perfectly integrated.

  4. Once you have the dough ready, prepare the molds where you are going to bake your biscuits, spraying them with non-stick spray. It is preferable to opt for removable molds for this recipe.

  5. Divide the dough into the three molds, so that the same amount of mixture remains in them.

  6. Take the molds to the oven preheated to 180 ° C with heat up and down, for approximately 25 minutes. However, to know if the biscuits are cooked, prick them with a toothpick. If it comes out dry and without dough, it will indicate that the biscuits are ready.

  7. Once ready, remove the biscuits from the oven and let them rest on a wire rack at room temperature for 10 minutes before unmolding.

  8. Unmold the biscuits and wait until they cool completely on the rack.

  9. Once they're cool, trim off the puffy tops so they're completely flat on both sides.

Preparation of the cake topping cream:

  1. Start by separating 400 milliliters of the vegetable cream in a bowl, and then proceed to beat it for half an hour at medium speed with electric rods for at least 2 minutes. In case the cream you use is not sweetened, you must include 100 grams of powdered sugar in this step.

  2. When you notice that the cream has foamed a little, add the vegetable coloring, followed by the flavoring, to proceed to continue beating until you finish whipping it.

  3. To make the rest of the cream, repeat the same procedure as above with the rest of the cream and pour in some of the pink coloring and strawberry flavouring. However, you should beat this a little less time to make it creamier.

Assemble and decorate the vegan cake

  1. Place a little of the cream on the turntable where you will serve it and place a circular cardboard for cakes on top. Next, place a little more cream on the cardboard circle to keep the cake fixed.

  2. Place the first sponge cake on top of the cream. Then, pour the green cream into a pastry bag and proceed to cover the surface of the sponge cake with the cream. Subsequently, smooth with the help of a palette.

  3. On top of the cream, add a little of the strawberry jam, which if you like can be homemade or bought.

  4. Place the next sponge cake on top and repeat steps two and three, covering this sponge cake with cream and jam, just like the previous sponge cake.

  5. Proceed to layer the next layer of cake, but this time upside down.

  6. Add a little of the green cream on the sides and on the top surface. With the help of a palette, proceed to distribute it very well and then smooth it. It is not necessary that it is perfect, but that it covers the biscuits.

  7. Transfer cake to serving plate and cover cake with remaining cream and smooth with spatula.

  8. Pour the pink cream into a pastry bag with a star tip and proceed to make continuous rosettes on the edge of the cake. Another option is to decorate by making spirals.

  9. Finally, decorate the walls of the cake with sprinkles and the spirals with edible pearls.

Other alternatives to make the cake

With the ingredients that have been mentioned above you will obtain a perfect sponge cake and cream. However, if you do not have these at home, you can substitute some of these for the following ingredients:

  • You can replace the ground panela with brown sugar or if you like, with white sugar.

  • Coconut oil can be replaced with mild olive oil.

  • If you don't have coconut milk, you can use oat milk or rice milk.

  • If you don't have apple cider vinegar, you can substitute it with rice vinegar.

  • If you don't have lemon zest, you can use orange zest.

  • If you don't have common wheat flour at home, you can use whole wheat or rice flour.

  • If you don't have jam, try using melted vegan chocolate instead.

  • If you don't have sprinkles or sugar pearls, try using vegan cookies or chocolate rain.
