Stuffed squid is one of the greatest culinary delights because you can practically add the stuffing you want and accompany them with an exquisite sauce. However, they are usually stuffed with shrimp or other similar stews.

Stuffed squid In Sauce
Ingredients:
4 large squid.
4 boiled eggs.
An onion.
Four cloves of garlic.
400 grams of crushed tomatoes.
Chopped parsley.
Two bay leaves.
A small tablespoon of peppercorns.
A tablespoon of wheat flour.
25 milliliters of brandy.
100 milliliters of white wine.
A liter of fish broth.
Salt to taste.
Three tablespoons of olive oil.
Steps for the elaboration:
Take two tentacles and peel, extracting the tails. Next, remove the central spine, and then clean the inside well.
Peel the squid rings from another pair of tentacles and cut them into medium pieces. Booking.
Place a medium skillet over medium heat and pour the olive oil into it. Then, cut the onion and garlic into very small pieces, to proceed to add them to the pan and begin to sauté.
Add a little salt to taste and continue to sauté until the onion is translucent.
Add the tentacles and tails of the squid that you had previously chopped. Saute for a couple of minutes and add some crushed tomatoes. Let everything cook for another couple of minutes.
Remove the skillet from the heat.
Chop the boiled eggs into small pieces and add to the pan, then add a little salt to taste and mix to integrate.
Fill the squid with the sauce from the pan, so that they are well filled, and place a toothpick, closing them so that the filling does not come out. Booking.
Add enough oil to a pan and place it over medium heat. Once the oil is hot, place the squid and let them cook for a minute on each side.
After a couple of minutes, pour in the cognac and let it cook until reduced.
Remove the squid after a minute and reserve, pouring the contents of the pan on top of them.
Clean the pan a little and add a tablespoon of oil and leave over medium heat on the stove.
When the oil is hot, add a little more chopped onion and garlic and fry them with peppercorns, a bay leaf, and a little salt to taste.
When the onion is golden, add the flour and let it fry for a few more minutes. Then, add the crushed tomatoes and fry them for a few seconds.
Finally, pour in the white wine and mix well, letting them cook until the alcohol is reduced. When it is about to break to a boil, add the chopped parsley and mix, to let it cook with the fish broth.
Let everything cook for 15 minutes over medium heat, adjust the salt and add the stuffed squid to cook in the sauce. Finally, let them boil over medium heat for about 15 minutes. Remember to turn them over so they cook on both sides.
When the sauce has been reduced, serve by pouring the sauce on top.
Prawn stuffed squid
Ingredients:
4 squid.
Salt and pepper to taste.
15 milliliters of cognac.
An onion.
150 grams of peeled prawns.
7 cloves of garlic.
125 milliliters of white wine.
375 milliliters of water.
3 eggs.
Two tablespoons of cornflour.
Steps for its preparation:
Clean the squid and reserve the inside of these chopped in a separate bowl.
Cook the eggs separately for approximately 9 minutes and when you finish run them under cold water to make it easier for you to peel them. Then chop them into small pieces and pour them into the bowl with the pieces from the inside of the squid.
Peel the prawns and add them to the bowl with the eggs and minced squid meat. Then, sprinkle a little salt and pepper to taste to mix them well.
Carefully fill the squid with the contents of the bowl and light them with a toothpick. Booking.
Pour olive oil into a saucepan and place the pot on the stove over medium heat. When it is hot, place the stuffed squid there and let them fry on both sides.
When the squids are cooked, remove them from the pot and place them on a plate. With the same oil from the pot, place the chopped onion, along with the garlic cloves and fry for a few minutes. Don't forget to sprinkle some salt on this step.
Pour some cornmeal into the pot and lower the heat to a minimum. Stir while everything cooks, then add the cognac and wine. Let them cook until they evaporate completely.
When you notice that the sauce has thickened completely, add enough water to cover all the ingredients and adjust salt and pepper if necessary.
Take the content to the blender and beat everything until you get a very fine consistency mixture.
Finally, return the sauce to the heat on the stove and place the prawns there to cook them a little more, but on low heat for a couple of minutes. Remember that you must cook it on all sides.
