Ingredients of the crème brûlée

  • 4 egg yolks.

  • Enough sugar that the surface will burn.

  • 60 more grams of sugar.

  • A pinch of salt.

  • A vanilla bean. You can also use a cinnamon stick.

  • 50 ml of heavy cream (or liquid cream).

  • Raspberries, the amount you consider necessary.

  • Raspberry jam (optional).

Steps to follow to prepare the crème brûlée

Note: Because the recipe is a bit long, we will divide it into several main phases in this one.

Preparation of the cream:

  1. In a saucepan add heavy cream, the essence of vanilla and the seeds of the pod or the cinnamon sticks.

  2. Turn the stove to low heat and place the saucepan on top to heat this mixture for 10 minutes, but do not let the contents of the saucepan boil.

  3. Remove the pot from the heat and let it sit at room temperature for thirty minutes.

  4. Turn on the oven and preheat to 160º C. Inside the oven we will place a tray that is large enough to house all the molds for the crème brûlée. In the tray, pour two fingers of water to warm it in the oven.

  5. When you notice that the cream is already at room temperature, strain to remove the vanilla or cinnamon seeds.

  6. Beat the yolks and sugar in a separate bowl, until they reach a frothy consistency.

  7. Add the cream little by little in the bowl with the yolks, but without stopping beating, until everything is integrated perfectly. The ideal is to achieve a thick and homogeneous mixture.

  8. Pour the previous mixture into a saucepan and put it on the stove over medium heat, stirring so that it continues to thicken for about 4 minutes.

  9. Turn off the stove and pour the contents of the saucepan into the molds. Place the molds on the tray with water that was in the oven. Keep in mind that the water should reach the middle of the molds.

  10. If you like, add pieces of chopped raspberry to the molds.

What can I accompany the crème brûlée with?

Crème brûlée is a type of dessert that should be eaten cold, so a good option is to accompany it with a little cinnamon sprinkled on the surface. Also, you can accompany bywith cut strawberries instead of raspberries, or with pieces of peach.

If you are a big fan of chocolate, you can also coat the surface with chocolate syrup, or include pieces of chocolate in the cream when baking. This complements very well with the flavor of cream and caramel, making it an ideal companion.

How should I keep the crème brûlée?

Since it is a cold dessert, it is best to keep it in the refrigerator very cold, but not at a temperature that will freeze it. This is because the cream will be damaged by thawing from excess moisture.

If you have it out of the refrigerator, at room temperature, take into account that after a few hours, the cream will turn sour. Therefore, if you are not going to eat it immediately, it is best to store it in the refrigerator.

Variations in the recipe

  • If you like to use alcohol in desserts, you can include a little of the wine of your choice at the time of whipping the cream. However, you should taste the flavor to see if you should add a little sugar.

  • If you want an authentic raspberry flavor in the crème brûlée, you can extract a little juice and add it when beating the cream mixture.

  • If you don't have an oven, you can do it on the stove, in a well covered aluminum saucepan and in a bain-marie. The lid of the pot must be made of aluminum, or else cover a tray with aluminum foil.
