Do you already know the Pide or Turkish pizza?
Pide is a kind of flat bread that has the filling on top. The filling can be of any type, meat, cheese, sausages, or others. In fact, you can add whatever you want, although the most traditional filling is meat.
Because of the way it is made, it looks like a kind of pizza, but instead of being round it has a beautiful shape of a ship.
In addition, it is cut into pieces and is very comfortable to eat. As for the dough, it is very thin, crunchy and very tasty on the palate.
Next, we will explain how to make it easily and without using too many ingredients.
Turkish Pina or Pizza Ingredients
For the mass
320 grams or 2.5 cups of wheat flour.
1 large egg.
60 grams of natural yogurt.
35 milliliters or 3 tablespoons of oil.
50 milliliters of water.
6 grams of fresh yeast or 2 grams of dry.
1 teaspoon of sugar.
1/2 teaspoon salt.
For the filling
300 grams of ground beef.
1 onion.
1 or 2 tomatoes.
8 to 10 sprigs of parsley.
2 to 3 teaspoons of bell pepper sauce or 1 fresh bell pepper.
Salt.
Spices to taste (cumin, black pepper, chilli).
Cheese to taste, (it can be feta or mozzarella).
Steps for the preparation of the Turkish order or pizza
To make the dough
In a glass, place 50 milliliters of warm water and add 6 grams of fresh yeast or 2 grams of dry.
Add 1 teaspoon of sugar. Then, add the brown sugar and stir very well.
Let the mixture rest for 10 to 15 minutes or until the yeast is activated. When you see the bubbles then the yeast has been activated.
Pour the yeast mixture into a bowl. Crack a large egg, then add 1/2 yogurt (60 g), preferably plain, unflavored yogurt. Stir everything until integrated.
Sift the wheat flour, then add 1/2 teaspoon of salt and stir.
Add 3 tablespoons (35 milliliters) of oil. You can use the oil that you like the most. Finish forming the dough.
Leave the dough to rest for about 20 minutes, so that the flour particles are moistened.
Pour the dough out on the table and knead it until it becomes smooth and uniform, about 5 minutes. You will know that the dough is ready when it does not stick to your hands, it is uniform and soft.
Divide the dough into 4 pieces and make balls.
Sprinkle the bowl with a little flour and put the balls inside. It is not mandatory to put them in the container, you can leave them on the table sprinkled with a little flour and cover them. Cover the dough and let it rise doubling.
To make the filling
In case you have bought whole meat, shred the meat that you are going to use.
Mash the parsley and onion, letting it mix with the meat. Another option is to chop them into very small pieces and incorporate them into the ground beef.
Cut the tomatoes into very small pieces and also incorporate them into the meat.
Place a skillet over high heat and add a little oil. Wait for the oil to heat up.
Pour the combination of meat with onion, parsley and tomatoes into the pan. Sauté the meat a little while it cooks until it changes color.
Add a couple of tablespoons of the pepper paste and then sprinkle a pinch of cumin, the salt and crush the chilli. Finally, sprinkle on some grounds black pepper.
Stir everything so that it integrates perfectly and finally takes the meat to a plate to reserve it.
Assemble the asks
Once the dumplings have risen, uncover them.
Turn the oven to 250º C with heat from above and below. If your oven does not have this function, you must place the tray in the center.
Sprinkle the table with flour. Take a ball and stretch it with your hands in the shape of an oval or a boat. You can also stretch it with the help of a roller. It has to be 3 to 5 millimeters thick. Repeat the process with the rest of the dough until you form about 4 Pides.
Distribute the filling and close, folding the edges inwards and joining the ends, so that it is like a canoe.
Bake the pides
Place the pides on the baking sheet lined with parchment paper.
Top with grated cheese.
Put them in the oven and bake for 10 to 15 minutes or until it is the way you like it.
When you notice that the orders are golden and with the cheese very gratin on the surface, remove from the oven.
As an added touch, you can sprinkle a little Parmesan cheese over the pides and garnish with a sprig of parsley.
Variations in the recipe
If you want the recipe to be a bit more Italian-style, you can vary the recipe as follows:
Add some Neapolitan sauce to the base before adding the meat.
If you like, substitute the grated mozzarella cheese for the meat over the sauce and place a few pieces of chopped pepperoni on the surface.
If you want to add the meat, you can also do it, but always placing a generous layer of mozzarella cheese on the initial base and another on the meat.
At the end, be sure to add a little Parmesan cheese.
It's also a good idea to add a little oregano to the filling for seasoning, as this will give it an authentic Italian touch.
