Steps for making biscuits
Preparation of the dough
Start by placing the butter in the bowl of the mixer, but make sure it is at room temperature so that it integrates better with the rest of the ingredients.
Add the icing sugar over the butter with the help of a strainer. Also add the brown sugar and mix on medium speed for about 3 minutes or until you see that everything is well combined.
Before adding the egg, whisk it in a separate bowl and add it to the mixture. Beat the mixture for one more minute.
Once this is done, add the vanilla and beat a few more seconds until you have a homogeneous mixture.
With the help of a strainer, add the flour and also the cornstarch or cornstarch. Sift everything together over the previous mixture and add the salt before starting the mixer.
Turn on the mixer at the lowest speed you can, so you will mix slowly and the gluten in the flour will not develop, which will make you get cookies with an exquisite texture.
Once you have the cookie dough ready, you can stretch it. To do this, sprinkle a surface with flour and roll the dough with a rolling pin to a thickness of 2 millimeters.
Roll the remaining dough into a ball and let it rest on a sheet of greaseproof paper or vegetable paper and place another sheet of greaseproof paper on top.
Place the stretched dough on a tray lined with parchment paper and place another piece of paper on top. Refrigerate the dough for a couple of hours or until firm.
Repeat the process of stretching the dough and placing it on the tray, to take it to the refrigerator.
Form the cookies and bake the top
After two hours, remove the dough from the refrigerator and remove the waxed paper from the surface.
Cut out small circles about 14 inches in diameter. To do this, place the cutter on top and press a little. You can use plastic or metal cutters.
When you have the circles cut out, transfer them to an oven or cookie mat.
Cut out the little hearts that go on top of these circles and for this use a cutter 25 centimeters in diameter. When you place the little heart on top of the circle, remember to press a little so that it stays fixed.
Before baking, refrigerate them for 10 minutes.
When the cookies are firmer, you can bake them, so it will be time to take them to the oven preheated to 160º C, preferably with heat up and down and without a fan. Bake until lightly browned, this may take 10 minutes.
When you have the cookies ready, remove the cookies from the oven and let them rest at room temperature on the same tray for 10 minutes.
After the resting time, you can transfer them to a rack to cool completely.
Form the base of the cookie and bake
Take out the other sheet of stretched dough and cut with a round cutter a little larger than the previous one, 5 centimeters in diameter. The ideal is to make a basket with the cookie.
Form the same amount of cookies made previously and place them on a tray with waxed paper, or on a tray for cupcakes.
Take the tray with the dough to the refrigerator and let it rest for ten minutes.
Bake the cookie sheet at 160º C with heat up and down and without a fan, for about 12 minutes.
Once the baking time has passed, remove the cookies from the oven and let them rest at room temperature for 10 minutes in the same mold.
After 10 minutes, remove the cookies from the tray and leave them to rest at room temperature on a wire rack until they cool completely.
Form the cookies
Place the Nutella in a pastry bag with the pick of your choice. It is advisable not to put too much quantity so that the Nutella does not overflow.
Cover the entire surface of one of the bases with the Nutella and then cover with the cookie that has the heart.
Repeat this same process with all the cookies.
Once ready, they will be perfect to eat.
Nutella's biscuits or cookies are a very delicious and simple type of dessert to make, which deserves that you try to make it at home and enjoy it at home. However, feel free to give it your own personal touch and try using another filling, if you are not a fan of chocolate.
