Chicken pancakes

Who does not love to eat chicken? This is the most consumed bird, in nuggets, in pieces, stewed, in soup, fried, among others.

However, you may never have tried them in fried pancakes. These are similar to nuggets, but with a larger and more delicious finish, crisp on the outside and juicy on the inside.

Its preparation is quite simple, as it can be done in a few steps, and it is not necessary to use many ingredients, so it is economical to prepare it.

Ingredients:

To cook the chicken

  • 2 boneless chicken breasts.

  • 1 teaspoon of oregano.

  • 2 cloves of garlic.

  • A quarter of onion.

  • 2 tablespoons of chicken bouillon powder.

To form the chicken pancakes

  • 2 eggs

  • 1 and a half cups of mozzarella cheese.

  • Half a cup of parsley or coriander.

  • Half a cup of wheat flour.

  • Half a teaspoon of ground black pepper.

  • 1 teaspoon salt.

  • 1 teaspoon of dried oregano.

  • A pinch of lemon zest (only the yellow part).

  • Half a cup of mayonnaise.

  • A cup and a half of breadcrumbs or breading.

For the pepper sauce (Optional)

  • A quarter of a green pepper.

  • A quarter of a yellow pepper.

  • A quarter of an orange bell pepper.

  • A quarter of a red pepper.

  • 1 cup of heavy cream.

  • 1 teaspoon of paprika to add color.

  • A pinch of salt.

Steps for making chicken pancakes

Chicken elaboration

  1. Cut the onion into small squares. Next, cut the garlic into slices and reserve.

  2. Place a pot on the stove over medium heat and place the boneless chicken breasts there, along with the onion pieces and garlic slices.

  3. Add the chicken broth, oregano, and enough water to cover the chicken breasts.

  4. Add a little salt and pepper to taste.

  5. Leave on the stove until the water is boiling and after this time, let them cook for approximately 10 to 15 minutes or until the chicken is tender.

  6. After this time, check that the chicken is ready and if so, remove it from the heat.

  7. Remove the chicken breasts from the heat, strain to extract the liquid, and place the breasts on a plate to let them cool for a few minutes.

  8. After a few minutes, when the breasts are at a temperature where you can handle them, shred them. For this, you can use an electric mixer on low speed.

  9. Reserve a little broth for making the sauce if you like.

Preparing the chicken dough for the pancakes

  1. Place the shredded chicken pieces in a large enough container and crack the eggs to integrate them with the chicken.

  2. Add the half cup of coriander and the cup of mozzarella cheese to proceed to mix and integrate.

  3. Add salt, pepper and oregano for seasoning, followed by lemon zest for seasoning and mix everything. Keep in mind that you only have to integrate the yellow or green part of the lemon, without reaching the white part.

  4. Integrate the wheat flour and a little mayonnaise to form a paste. You can start mixing with a paddle and later, and with clean hands, begin to knead until you get a homogeneous mixture.

  1. Once you have a homogeneous dough, a well heaped spoon of the mixture and give it a circular shape of the hands, in such a way that they look like pancakes.

  2. Place the bread crumbs or breadcrumbs on a plate and pass each of the pancakes there, so that they are well covered with the breading.

  3. Let them rest briefly on a plate while the oil heats up.

  1. Place a skillet over medium heat and add enough oil. Wait for it to heat up. You will know the oil when you add a pinch of the mixture and a lot of bubbles come out of the oil.

  2. Add each of the breaded chicken patties to the pan with hot oil and wait for them to begin to brown.

  3. When you notice that they are golden brown on the bottom, proceed to turn them so that they cook on the other side.

  4. When the pancakes are golden enough on all sides, remove them from the pan and place them on a plate lined with absorbent paper so that the oil drains off a bit. Cooking may take approximately 3 minutes.

  5. Repeat the process of frying the pancakes with each of the pancakes.

Preparation of the pepper sauce (optional)

  1. Cut the peppers into pieces small enough for them to easily crush.

  2. Add the peppers to a blender or large bowl to beat with an electric hand mixer.

  3. Add the heavy cream, salt, and paprika, but be careful not to add too much salt, as the paprika is a bit salty.

  4. If you like, add a tablespoon or two of the broth where you cooked the chicken breasts to the bowl with the rest of the ingredients or the blender.

  5. Proceed to mix everything until you get a homogeneous mixture.

  6. Place the freshly made sauce in a small serving bowl.

  1. Place the pepper sauce in the center of the plate where you are going to serve.

  2. Arrange the chicken patties around the bowl with the sauce.

  3. If you like, and you do not want to serve the pancakes with the pepper sauce, you can simply serve with tomato sauce, as shown in the initial image.

Chicken pancakes can be perfect for a quick dinner or children's lunch. You can accompany these if you like with white rice or vegetables, for a more balanced meal.
