Preparation of the biscuit base

  1. In a food processor we place the cookies and light until the cookies are pulverized. Once this is done, we place the crushed cookies in a bowl and reserve.

  3. Add the cream from step 1 to the cream cheese mixture and beat for a few more seconds until you notice that everything is well integrated.

  4. Next, add the lemon zest and the vanilla essence and continue beating at low speed to integrate. Remember that it is important not to beat in excess, but only what is necessary to integrate.

  5. When we notice that the mixture is integrated, we sift the cornstarch over it and again beat at low speed for a minute.

  6. Later, in a separate bowl, beat the three eggs a little with a fork and pour them into the mixture in three parts while beating at low speed.

  7. When you notice that everything has a uniform color, check that there are no lumps or debris at the bottom of the bowl.

  8. If all is well, pour the mixture into the mold with the cookie base.

  9. Give the pan small jumps to remove any air bubbles from the mixture.

  10. Once ready, take the cheesecake to the preheated oven at 160º C, with heat up and down and without a fan for 50 minutes. Ideally, it should have a slightly golden hue on the surface.

  1. Once this time has passed, let the cheesecake rest in the oven and with the door closed for 30 more minutes.

  2. Open the oven door after thirty minutes and let it rest for 15 more minutes in this way.

  3. Remove the mold from the oven after this time and let it rest at room temperature until it cools completely.

  4. When completely cold, place the cheesecake in the refrigerator for 6 hours or overnight.
