For the flan
500 ml of water or milk.
150 grams of oatmeal in flakes.
500 ml of water where to soak the oats.
220 grams of sugar.
A spoonful of vanilla essence.
110 grams of cornstarch or cornstarch.
For the caramel
Three tablespoons of water.
Four tablespoons of sugar.

Preparation of oats
First we will soak the oats, and for this we place 150 grams of oats in flakes in a bowl and pour half a liter of fresh water over it.
Stir a little with the help of a spoon and let it rest overnight in the refrigerator. Ideally, it should last at least 12 hours soaking in the refrigerator, because the more it hydrates, the better it will be.
Making the caramel
In the same mold where you will make the flan, pour the four tablespoons of sugar, followed by the three tablespoons of water.
Move the mold so that the water is distributed throughout the sugar.
Turn the stove on to medium heat and place the mold there, allowing it to heat up and the sugar to begin to turn golden brown or darken.
When you notice that the sugar has a consistency and color like syrup, remove the mold from the heat.
Move the mold so that all the caramel is impregnated, or if you like, use a trowel to spread it well.
Reserve the mold with the caramel in the refrigerator.
Preparation of flan
Take the oatmeal that you had reserved in the refrigerator and strain it to remove all the liquid
Complete half a liter of the liquid, if the liquid does not reach half a liter, you can complete with water. On the other hand, we will place the oats on a plate.
Pour half of the oatmeal water into a bowl with 110 grams of cornstarch or cornstarch and start beating with the help of a steel whisk to dissolve it.
Mix the cornstarch with the rest of the oats and then pour everything into a blender.
Add the oatmeal that we had reserved on the plate, followed by 220 grams of sugar and a tablespoon of vanilla essence.
Turn on the blender and let it blend well until you get a homogeneous and one-color mixture. Two or three minutes should be enough.
Pour the flan mixture into a saucepan.
Add just a little water to the blender to wash it a bit and pour it into the pot anyway. Then, we also add the 500 ml of water. If you like, you can substitute this water with milk.
Mix very well with a steel rod hand mixer.
Flan cooking
Place the pot with the previous mixture on the stove over medium heat.
Mix immediately with the whisk. Do not stop mixing while the mixture is cooking, as this will prevent it from sticking or forming lumps. You must mix vigorously and repeatedly until it starts to boil.
When it starts to boil, we let it cook for one more minute but without stopping beating.
After a minute, if you notice that it already has a creamy consistency, remove it from the heat.
Let the flan cool
We pour the mixture into the mold where we had previously made the caramel.
With the help of a trowel, smooth the surface.
Settle by tapping against the table or work surface.
Let the mixture cool slightly, bringing it to room temperature.
Once it has cooled, cover with aluminum foil and place the flan in the refrigerator.
Leave the flan in the refrigerator for at least 4 to 8 hours. A good option is to make the flan at night and leave it in the refrigerator overnight.
After 8 hours, we remove the aluminum foil and place a plate as a lid on the mold and press with the other hand to turn it over.
Remove the mold and reveal the flan with the caramel on top.
Cut a piece of flan and enjoy.

If you think it is necessary to use more water to hydrate the oatmeal, you can add it as needed.
Ideally, while the sugar is caramelizing, use a paddle to stir a little to prevent sticking. If you like, use some oven mitts and move the mold to prevent the sugar from sticking.
