The best Christmas lollipops to surprise your children at parties
If you still don't know what snack to give your children at Christmas, why not some delicious and festive Christmas lollipops? These are very simple to make, so it will only take you a couple of minutes to make them.

Christmas popsicle ingredients
For the biscuit
2 Eggs L
120 grams of normal white sugar
Lemon zest
80 milliliters of mild olive oil (or sunflower, canola or corn)
125 grams of plain yogurt (preferably unsweetened)
1 teaspoon (tsp) of vanilla extract or essence
170 grams of all-purpose common wheat flour
1.5 teaspoons of baking powder or chemical yeast
1/4 teaspoon of salt
120 grams of Blueberries and raspberries (or strawberries and blackberries)

Chocolate or colored icing (green, white, red and brown)
Sugar dolls
Pretzel cookies
Fondant hats
Sprinkles
Edible glitter
Gold and pink powder edible food coloring
Black edible paint
Steps to make Christmas lollipops
Make the dough and bake it
Start beating the eggs at medium speed for 5 minutes or until they foam, to this add the sugar and lemon zest and continue beating for a minute.
Put the mixer on low speed and add the olive oil, yogurt and vanilla extract little by little. Mix a few more seconds until everything is well combined.
With the help of a strainer, add the wheat flour and baking powder to sift. Once this is done, add the salt and mix a little with the mixer turned off so that the flour does not fly away.
Put the mixer at minimum speed and beat until everything is completely integrated. When you have the dough ready to bake, grease the molds and pour the dough into the molds. The remaining mass, reserve at room temperature.
Before taking to the oven, distribute half of the fruit and once this is done, cover the fruits with a little batter.
Take the tray to the preheated oven, preferably with heat up and down, for about 18 to 20 minutes. It is advisable to prick the cake with a toothpick to check that they are really done.
Assembling the pallets
Take the mold out of the oven and let it rest for 10 minutes at room temperature on a wire rack.
Place the rack on top and flip it over to remove from the pan.
Let stand at room temperature on the same rack until cool completely.
Once the cakes are completely cold, cut a little so that they fit better in the mold and cover these popsicles with the drops of candy-colored chocolate. You can also use white chocolate dyed in the color you want.
Melt the chocolate in the microwave or in a double boiler.
Make a hole in the bottom of each cake to make sure that the toothpick fits well and with the help of a brush cover the inside walls of the mold.
Insert the toothpick into the slot of the mold and cover with chocolate. Then, click the cake on the toothpick and arrange it in the mold and add more chocolate on top to cover it completely.
Once this is done, smooth the surface with a knife or spatula and refrigerate for about 10 minutes, or leave at room temperature until it hardens.
Continue like this until all the palettes are covered with the other colors.
Unmold and decorate
Once the chocolate is ready, stretch the mold a little to detach it and remove the palette.
Start decorating depending on the color. For example, if you make a polar bear palette, make it with white fondant for the ears and nose and paint the details with edible paint and a little pink food coloring for the cheeks.
If you make a Rodolfo-shaped palette, use pretzel-type cookies cut in half to make the horns dipped in white chocolate and gold paint, a red candy glued to the palette with melted chocolate to simulate the nose, and paint the details with paint.
The other details, you can do with white fondant and edible paint. The ears and ears of the characters must be glued with melted chocolate.
The last decoration will be done in a green palette bathing with threads of white chocolate and the upper part of the palette, on the chocolate place the sprinters that you like the most we put and a little edible glitter and fix a sugar doll.
Repeat this last design in another red color palette.
Recommendations for perfect palettes
If you really want the popsicles to be perfect, don't skimp on items to decorate them.
If you don't want to make a biscuit, you can make them only with a mousse filling and covered in chocolate, but you must be more careful when handling them so that they do not break.
If you don't want to make a Christmas design because it is too complicated for you, you can simply sprinkle nuts on the surface while the chocolate is half dry.
The popsicles should be kept in the fridge or refrigerator to avoid warping or damage, otherwise the chocolate will melt.
