Spring rolls are a classic recipe in Chinese cuisine. But, in this article we will prepare we will make a new but simple version. In addition, we will explain how the rolls are wrapped in a type of dough that is special for spring rolls.

  • 2 cloves of garlic, previously peeled.

  • 1 egg.

  • Salt to taste.

  • One tablespoon of soy sauce.

  • Enough oil for frying.

How to prepare spring rolls?

Note: Due to the extension of the recipe, we will divide the process into four parts.

For the mass:

  1. Place the water, then add the flour and a pinch of salt in a bowl and with the arm mixer we mix until it is a fairly liquid mixture.

  2. Once the dough is made, we go on to heat a non-stick pan, in this case it is a crepe maker, but you can use any normal non-stick pan.

  3. As soon as it is hot, it is removed from the heat and with a kitchen brush, the pan is painted. You have to cover the bottom of the pan well and make sure that there are no spaces without dough.

  4. Once the pan is covered with the dough, it is returned to the heat and this should be moderate. You have to wait for it to cook completely and peel off.

  5. The mixture is removed to a clean plate. Another option is to leave it on top of a separate clean cloth.

  6. In case you are not going to use them immediately, place the wrapped crepes on the clean cloth in the refrigerator.

For the filling:

  1. To make the rolls we will make a filling with the carrot, onion, garlic and Chinese cabbage. It is noteworthy that you can use any other type of cabbage. We will also use some bean sprouts and minced pork. We wrap them with the sheets that we have just prepared and the frying oil.

  2. To start, you have to chop the vegetables well so we finely chop the garlic, peel the carrot and grate it well with a coarse grater. The onion should also be well chopped.

  3. Cut the Chinese cabbage leaves into julienne strips. If we can't find bok choy, you can use another type of cabbage, it doesn't matter what you have on hand.

  4. The next step is to cook all the filling, so we put a splash of olive oil in a pan and start browning the garlic. You have to be careful that it does not burn.

  5. We immediately add the meat and wait for it to melt well, season with a little salt.

  6. When you see that the meat is already cooked and begins to change color, add the onion and carrot, stirring and sautéing over high heat for three minutes. At that time we add the cabbage and season with a little more salt. You can use spices and seasonings to your liking.

  7. Wait four minutes and finally add the bean sprouts. We also add the soy sauce.

  8. We turn off the fire so that the filling cools down. We leave it on a tray, as the rolls have to be filled cold.

Preparation of the rolls

  1. A portion of filling is placed right at one end of the crepes and it is rolled up, when we reach the middle we fold. Now it looks good. The egg will stick well and if it opens a little don't worry.

  2. Another way to fill spring rolls is to use a phyllo dough found in most supermarkets. To do this, we make two rolls, we place a quantity of filling and now we have to give it the shape.

  3. The edges are folded and we paint the edge with a little egg.

  1. Now, it's time to fry the spring rolls. Usually, they are fried, but if you decide to do it in the oven, you will only have to brush them with beaten egg. Later, he places them on the oven tray and bakes them at about two hundred degrees until they are golden brown on the inside.

  2. To fry the rolls, we are going to use olive, but it must be very hot. Later, the rolls are placed. You have to brown them well on both sides.

  3. Once browned, they can be removed from the heat and once fried they are placed on a plate and served with sweet and sour sauce and soy sauce.
