If you have seen the Disney Princess and the Frog movie, surely you know that there they prepare a soup called "gumbo", which seems to be very tasty. This is a soup, the ingredients of which vary. In fact, it can be prepared from seafood, beef or pork.

However, below we will explain how to prepare this gumbo with a mixture of several of these types of meats, as this combination makes it more delicious. You should also know that although this process seems to be a bit long, it is actually very simple.

At the end of this recipe, you will have a delicious dish that you can share with your friends and family.

Gumbo ingredients

  • Two and a half cups of butter.

  • Three and a half cups of chicken broth.

  • Three-quarters of a cup of wheat flour.

  • 350 grams or half a pound of hot sausages.

  • Half chopped onion.

  • Two or three chicken breasts. Get the skin and bone out of the way.

  • Two large bunches of chopped celery.

  • Half a green pepper, chopped.

  • Two medium tomatoes, fresh and chopped.

  • Four finely chopped garlic cloves.

  • Six fresh bay leaves.

  • One and a half cups of water.

  • A tablespoon of cajun spices.

  • Half a tablespoon of dried thyme.

  • Salt and pepper to taste.

  • One cup of chopped okra.

  • Two tablespoons of Worcestershire sauce.

  • A tablespoon of white vinegar.

  • One pound of shrimp, previously washed and peeled.

  • One tablespoon of Tabasco sauce.

Steps for preparing gumbo

Note: Due to the length of the recipe, we will divide the procedure into five essential parts.

Steps to the Roux

  1. For the preparation of this that will be the base of the gumbo, we will prepare a fat with butter and wheat flour. Place a saucepan over medium heat and pour the butter and flour into it while stirring with a whisk.

  2. Beat constantly to prevent the roux from burning, for about 20 to 30 minutes. Ideally, it should have a color and consistency similar to chocolate.

  3. To the roux, and in the same saucepan over medium heat, add the broth and stir constantly while you do it. When you have finished, you will notice that you will have a thick and shiny broth.

  4. Remove the saucepan from the heat and set aside.

Steps for meat preparation

  1. In a frying pan, add a little oil and place the chicken pieces on top, followed by the sliced sausages.

  2. Let them cook for a few minutes and on both sides of each piece, until you notice that they are golden brown. Ideally, in this step all the pieces are cooked well.

  3. Once cooked, remove the pieces from the pan, transfer to a glass bowl and reserve.

Preparation of the trinity of dressings

  1. This will be the time to prepare the famous trinity of New Orleans dressings. To do this, we chop a green bell pepper, an onion and a little celery into small pieces. Similarly, crush a couple of garlic cloves and reserve.

  2. Place a skillet over medium heat and add a little oil. Next, add the dressings and garlic. With the help of a wooden spoon, mix a little so that they integrate well.

  3. Once you notice that the ingredients are fried, add the tomato to them and mix with the spoon.

  4. While still mixing, add a few pinches to taste of Cajun spices. Finally, we place a few bay leaves in the dressing sauce and wait for them to give off their flavor in the sauce.

  5. At the end, pour a little water so that the dressings cook well.

  6. Cover the pan and let the water boil for a couple of minutes.

  7. After a few minutes, remove the pan from the heat and set aside.

Preparation of okra

  1. The okra will be the ingredient that will make the gumbo thick during cooking. To prepare it, cut the okra into small slices.

  2. In a pan, add a little butter and pour the okra into it.

  3. When you notice that the okra turns a little tan, add a little vinegar and let it cook with the okra for a couple more minutes.

  4. Pour the fried okra into a bowl and set aside.

Gumbo preparation

  1. Gather all the previously prepared items, which you had reserved.

  2. Place the pot where you had prepared the roux on the fire and very carefully pour the sautéed dressings into it. Next, add the chicken and sausages, as well as the sautéed okras and a little Worcestershire sauce.

  3. With the help of a wooden spoon, mix the ingredients well while they cook, so that they are integrated.

  4. Cover the gumbo and let it cook for 45 minutes over medium heat.

  5. Halfway through the waiting time, add the shrimp, as these will cook for the last 20 minutes of the gumbo along with the other ingredients. Continue mixing with the spoon so that the shrimp are well integrated. Cover and cook.

  6. When it is about to finish cooking, add a few drops of hot sauce to taste. Mix one more time and cover the pot.

  7. Once the gumbo is cooked, serve it on a ceramic plate or bowl, accompanied by a tablespoon of white rice.

Additional tips and advice for a perfect recipe

  • In case you have noticed that your roux has scabs that protrude on the surface, it will be an indication that it has burned, and you should start the process again.

  • In case you are not preparing the gumbo at the moment, you may well store the roux in the refrigerator for up to 24 hours.

  • You can buy Cajun spices at any local supermarket, or prepare it at home, as it is not complicated to make.

  • The gumbo can be accompanied by white rice or pieces of fried bread, to soak. Ideally, the roho sauce gumbo should be the accompanying complement.
