Ingredients

  • 900 grams of red potatoes.

  • Salt to taste.

  • 250 ml of Greek Yogurt.

  • Ground black pepper to taste

  • 30 ml of extra virgin olive oil.

  • 80 grams of pitted olives.

  • 10 ml of Dijon mustard.

  • Fresh coriander or parsley to taste.

  • Lemon zest.

  • Fresh dill.

Steps for preparation

  1. Wash the potatoes very well, peel them and cut into medium pieces. Wash the cut potato pieces again and set them aside.

  2. Wash and dry the aromatic herbs, that is, the coriander or parsley and reserve.

  3. In a pot or casserole, add enough water, add salt to taste and wait for the water to boil.

  4. When the water is about to boil, pour in the potatoes being careful not to burn yourself. When you notice that the water begins to boil again, lower the heat so that the potatoes do not overcook.

  • 150 grams of Cherry tomatoes.

  • One tablespoon of extra virgin olive oil.

  • 100 grams of cheese.

  • Fresh chives.

  • One or two carrots.

  • 125 grams of yogurt.

Steps for preparation

  1. Wash the lettuce with vinegar and then with water, chop it up and add it to a large salad bowl.

  2. Likewise, wash the tomatoes, cut them into four parts each and add them to the bowl with the lettuce.

  3. Peel the carrots and cut them into slices. Wash them, drain them very well and add together with the rest of the ingredients in the bowl.

  4. Cut the cheese into medium slices and also add to the bowl.

  5. In a separate, smaller bowl, prepare the sauce. To do this, we add the yogurt to the container, chop the fresh chives and add it to the small container with the yogurt.

Steps for preparation

  • A pinch of ground cinnamon.

  • 40 grams of dried cranberries or raisins if you prefer.

  • 40 grams of almonds.

  • Celery.

  • A peach.

  • A handful of fresh grapes.

  • A tablespoon of lemon juice.

  • A handful of lettuce.

Steps to follow for preparation

  1. Place a skillet over medium heat, add just a little oil and wait for the pan to heat up.

  2. Place the chicken breasts in small pieces on top in the pan and let them cook for a couple of minutes until they are golden brown.

  3. When cooked, let the chicken breast pieces cool, place them in a large container with the yogurt and a little lemon juice. Mix very well to integrate the ingredients.

  4. Cut the fruits and vegetables into medium pieces and add them to the bowl.

  5. Next, add the almonds and blueberries. With a trowel mix well so that they are integrated.
