100 grams of rice,
100 grams of raisins,
80 grams of walnuts,
2 onions,
200 milliliters of white wine,
Olive oil
5 mint leaves,
5 dill leaves,
1 lemon
Salt to taste,
Pepper to taste
Preparation method of Greek vine rolls
1. We will start by cooking rice the way you always prepare it at home.
2. During this time we will separate and wash very well but without breaking the vine leaves.
3. Inside a container, big enough to place the leaves, we put them to soak in hot water for an estimated time of 1 hour.
4. In the same way, as the leaves, but for a time of only 5 minutes we will place the raisins to soak.
5. During this time we will cut the veal into small squares. Then repeat the procedure for the walnuts.
6. Now, we proceed to place a frying pan with olive oil on the fire and place the onions previously cut into fine julienne strips inside it.
7. We will add the meat to the onions until they take a golden color. Then we will add the walnuts along with the raisins.
8. Next, we cut the mint and dill leaves to also add them to the pan along with the ground pepper to taste.
9. By having all the ingredients in the pan, we will mix very well for a time of more or less 3 to 5 minutes. We remove the pan from the heat and keep the mixture.
10. We add salt to taste to the mixture while it rests.
11. We remove the leaves from the hot water and prepare a container with cold water to pass them before using a cloth to dry them and with great care stretch them.
12. On a flat surface we spread each one of the leaves, and we place a considerable portion of the mixture of rice with meat on them, and we begin to roll as if we were making a tobacco.
13. After everyone is assembled, we will place them one by one inside a pot. In which they are adjusted one side of the other and on these we will place a plate that puts pressure on them.
14. Pour the white wine into the pot and place it on a low flame for 40 minutes of cooking time.
If you do not have white wine, you can simply use water for cooking.
15. At the end and remove them from the heat, take a little lemon juice and sprinkle them with it.
