  1. Place a saucepan on the stove over medium high heat and add two tablespoons of extra virgin olive oil.

  2. When the oil is hot, add the crushed garlic clove and half a chopped onion. Let them sauté for a couple of minutes.

  3. When you notice that the onion and garlic are golden, add the chopped red pepper and continue to sauté until they are slightly fried.

  4. Add the chopped fresh chorizo and a tablespoon of chorizo pepper meat. Next, sprinkle a little paprika or sweet paprika and hot paprika on top.

  5. Mix everything very well and continue cooking for a couple of minutes.

  6. Add the chopped potatoes, followed by a bay leaf and mix again very well while they cook.

  7. Pour enough water to cover the potatoes and when it starts to boil, sprinkle a little salt to taste.

  8. Cover the pot and let everything cook until the potatoes are tender, remembering to shake the pot from time to time.

  9. After about 20 minutes, the potatoes should be tender and it will be time to remove them from the stove.

  • A kilogram of potatoes.

  • Two cayenne peppers, optional.

  • 350 grams of sausage.

  • Two tablespoons of chorizo pepper meat.

  • Three cloves of garlic.

Steps for its preparation:

  1. Peel and wash the potatoes. Then, cut it into pieces, inserting the knife halfway and then pushing it out, in such a way that the potato clicks. This ensures that a starchy juice comes out of the potato, which will thicken the broth.

  2. Cut the chorizo into pieces of a couple of centimeters and reserve.
