Ingredients:

  • 600 grams of peeled and washed potatoes.

  • A little chopped paprika (only if you like).

  • Two tablespoons of extra virgin olive oil.

  • A piece of red pepper only if you like.

  • Half an onion.

  • A bay leaf, if you prefer.

  • A garlic clove.

  • Salt to taste.

  • A tablespoon of paprika, or if you prefer, sweet paprika.

  • A teaspoon of chorizo pepper.

  • 75 grams of fresh chorizo.

Steps for its preparation:

  1. Place a saucepan on the stove over medium high heat and add two tablespoons of extra virgin olive oil.

  2. When the oil is hot, add the crushed garlic clove and half a chopped onion. Let them sauté for a couple of minutes.

  3. When you notice that the onion and garlic are golden, add the chopped red pepper and continue to sauté until they are slightly fried.

  4. Add the chopped fresh chorizo and a tablespoon of chorizo pepper meat. Next, sprinkle a little paprika or sweet paprika and hot paprika on top.

  5. Mix everything very well and continue cooking for a couple of minutes.

  6. Add the chopped potatoes, followed by a bay leaf and mix again very well while they cook.

  7. Pour enough water to cover the potatoes and when it starts to boil, sprinkle a little salt to taste.

  8. Cover the pot and let everything cook until the potatoes are tender, remembering to shake the pot from time to time.

  9. After about 20 minutes, the potatoes should be tender and it will be time to remove them from the stove.

  10. Season with salt and if everything is fine, serve immediately.

  • A kilogram of potatoes.

  • Two cayenne peppers, optional.

  • 350 grams of sausage.

  • Two tablespoons of chorizo pepper meat.

  • Olive oil, necessary amount.

  • Half an onion.

  • Three cloves of garlic.

Steps for its preparation:

  1. Peel and wash the potatoes. Then, cut it into pieces, inserting the knife halfway and then pushing it out, in such a way that the potato clicks. This ensures that a starchy juice comes out of the potato, which will thicken the broth.

  2. Cut the chorizo into pieces of a couple of centimeters and reserve.

  3. Pour some olive oil into a saucepan and place it on the stove over medium heat, then wait until it is hot.

  4. Add the onion and garlic chopped very small and wait for it to fry. Later, sprinkle a little salt to taste and continue cooking until the onion and garlic are tender. This may take 5 minutes.

  8. Pour enough water into the pot to cover the potatoes. Another option, if you like, is to use chicken broth instead of water.

  9. Increase the heat on the stove to the maximum and cover the pot, letting the contents cook until it breaks to a boil.

  10. When the potatoes begin to boil, lower the temperature to a minimum and let them cook for 30 minutes. In the process, do not forget to move the pot so that the flavors are concentrated.

  11. Season with salt and prick the potatoes with a toothpick to see if they are well cooked.

  12. If the potatoes are tender, remove from the stove and let stand for at least half an hour. Then, enjoy with the contour of your preference and enjoy.
