Recipe for making a Basque cake

How to make a Basque cake?
For the mass:
The first thing is to cut the butter into small pieces and take it out of the fridge so that it can be easily integrated with the other ingredients.
While the butter is acclimating, scoop the plain out of the lemon.
Now, separate the white from the yolks of the two eggs.
Next, take a whole egg and beat it in a bowl until it changes color.

This mixture should be taken to a pot and placed over low heat.
Let the heat dissolve the ingredients and create a thick mixture, without stirring.
At this point, remove from heat and beat until mixture cools.
Assembling the Basque cake
When the filling and the dough are ready, it is time to preheat the oven to assemble and cook.
Choose a deep mold, grease it and flour it before working the dough.
Now, take the dough and divide it in two. One with 1/3 of the mass and the other with 2/3 of the mass.
At the workplace, sprinkle flour so that you work the dough without sticking.
Place the larger proportion batter on the bottom of the pan, letting a little of the batter come off the edges.
Prick the base of the dough with a fork so that it does not rise with the heat.
Pour the filling into the dough and cover with the other part of the dough.
