Ingredients:
500 grams of sweet potato
80 grams of sugar
20 milliliters of orange blossom water
1 egg
1 sheet of puff pastry (rectangular)
10 milliliters of rum
Lemon zest
Wheat flour
Preparation method:
Before starting, we will preheat the oven to a temperature of 180 degrees Celsius.
1. We will begin by washing the sweet potato very well, in order to later peel it and cut it into pieces of similar sizes.
2. In a pot we boil the water and inside this the sweet potatoes for about 40 minutes or until they soften.
3. In a colander we place the sweet potatoes to drain, once free of water, we place them in a container, and we begin to crush.
4. Once crushed, add sugar along with the lemon zest, rum and orange blossom water.
5. Let the mixture rest and proceed to pour wheat flour on a firm basis to work with the puff pastry sheet.
6. We spread the puff pastry sheet with the help of a roller and after stretching it we cut it into two strips of the same size.
7. We cover one of the strips with the sweet potato mixture that we had resting.
8. Once the mixture is added, we place the remaining puff pastry strip on it.
9. Once assembled, we beat the egg in a separate container and with the help of a pastry brush we paint the surface of the puff pastry sheet.
10. After painting it, we will use a fork and press the surface to prevent the dough from inflating.
11. With the help of a pizza cutter or a square mold, mark the bites in equal portions.
12. Once the bites are defined, we take the pieces to a tray covered with baking paper.
13. We take them to the oven keeping the temperature of 180 degrees for a time of 15 minutes.
14. Once we have verified that our sweet is ready, we take it out of the oven and place it to cool.
15. Already being totally cold, we proceed to cut the bites, which we have marked in advance.
And voilà, you have your sweet to serve your friends and family on a pleasant afternoon of visits or have them planned for a more special occasion.
Always remembering that you can accompany them with a coffee or hot chocolate, which contrasts with the ambient temperature of the sweet.
Although the ideal is that we do not add so much sugar to our composition in order to continue with availability for people with diabetes.
So, you know, sweet potatoes are not only for soup or other salty foods, you can take them out at this time from where you have them go to the supermarket to buy what you are missing and give yourself a sweet and pleasant treat.
