  5. When you notice that the dough is almost ready, add the 100 grams of butter and continue incorporating with the help of the palette.

  7. When the dough is compacted, flour a clean surface and dump the dough there to work it. Knead by hand for 15 to 20 minutes, until the dough does not stick to your fingers and is smooth and soft.

  8. Let the dough rest in a clean, floured bowl until it doubles in size. This can take one to two hours depending on the weather you have at home. In addition, you must cover the container with transparent film while the dough is at rest.

  1. Flour the work surface again and pour the flour that you have left to rest to proceed to knead it and deflate it.

  2. Form a ball with the dough, flatten it a bit and divide it into eight units that are the same size.

  3. Shape each piece of dough into a ball.

  4. Sprinkle a little flour on your work table and with the help of a rolling pin flatten one of the balls, leaving the smooth part below. Ideally, they should be rectangular.

  5. Fill by placing a couple of tablespoons of cocoa cream or if you prefer, a whole bar of chocolate. When placing the filling, you must leave a space of three fingers between the edges.

  6. Fold the edges in towards the center, making it look like an envelope, as shown in the image below. Then roll up to the edge.

  7. Before you finish rolling, brush the edge with a little water and fold, pressing down a bit to seal the dough in place.

  8. Repeat steps 4 to 7 until you finish making all the Neapolitans.

  1. Place the Neapolitans that you have finished rolling on an oven-safe tray, previously prepared with waxed paper on the bottom.
