Therefore, below we will explain how to make them with few ingredients and very easily.

Ingredients for the stuffing

  • Dark chocolate or cocoa cream.

  • Water to paint

  • An egg to paint.

  • Chocolate rains.

Steps for the elaboration of the chocolate Neapolitan

Preparation of the dough

  1. Add 560 grams of all-purpose flour to a bowl and make a hole in the center of the flour to add the rest of the ingredients.

  2. Pour 80 grams of sugar in the center, followed by 150 milliliters of warm water and the same amount but warm milk.

  3. Incorporate in the center the zest of an orange, a tablespoon of vanilla essence and 25 grams of fresh yeast. Mix all these liquid ingredients well in the center of the flour.

  4. Start incorporating the flour with the help of a palette and knead a little as far as possible using it.

  5. When you notice that the dough is almost ready, add the 100 grams of butter and continue incorporating with the help of the palette.

  6. When it is no longer possible for you to continue kneading with the paddle, proceed to knead with your hands.

  7. When the dough is compacted, flour a clean surface and dump the dough there to work it. Knead by hand for 15 to 20 minutes, until the dough does not stick to your fingers and is smooth and soft.

  8. Let the dough rest in a clean, floured bowl until it doubles in size. This can take one to two hours depending on the weather you have at home. In addition, you must cover the container with transparent film while the dough is at rest.

Form the Neapolitans

  1. Flour the work surface again and pour the flour that you have left to rest to proceed to knead it and deflate it.

  2. Form a ball with the dough, flatten it a bit and divide it into eight units that are the same size.

  3. Shape each piece of dough into a ball.

  4. Sprinkle a little flour on your work table and with the help of a rolling pin flatten one of the balls, leaving the smooth part below. Ideally, they should be rectangular.

  5. Fill by placing a couple of tablespoons of cocoa cream or if you prefer, a whole bar of chocolate. When placing the filling, you must leave a space of three fingers between the edges.

  6. Fold the edges in towards the center, making it look like an envelope, as shown in the image below. Then roll up to the edge.

  7. Before you finish rolling, brush the edge with a little water and fold, pressing down a bit to seal the dough in place.

  8. Repeat steps 4 to 7 until you finish making all the Neapolitans.

Bake the Neapolitans

  1. Place the Neapolitans that you have finished rolling on an oven-safe tray, previously prepared with waxed paper on the bottom.

  2. Let the napolitanas rest for at least 30 minutes on the tray.

  3. Beat an egg in a separate container and with it, paint the Neapolitans. Be careful not to prick the dough with the brush, as this will cause it to deflate.

  4. Spread some chips or chocolate rain on the Neapolitans to decorate them. Another option is to grate some chocolate for decoration.

  5. Take the tray to the oven preheated to 200º C, with heat up and down, for approximately 20 minutes.

  6. After 20 minutes, check that the Neapolitans are golden to remove them from the oven. If not, you can let them bake for 2-5 minutes as needed.

  7. Remove the napolitanas from the oven and let them cool slightly before removing them from the tray.

  8. When they are cold, store preferably in a bread basket.
