Cauliflower in cheese sauce
Ingredients
1 medium head of cauliflower.
¼ cup of water.
½ cup of mushrooms or zetas.
1 tablespoon of butter or margarine.
1 tablespoon of white flour.
¼ teaspoon of salt.
1 teaspoon of parsley.
½ cup of milk.
1 cup of cheddar cheese.
1/3 cup sour cream.
Preparation of cauliflower in cheese sauce
Chop the parsley finely and grate the cheese.
Clean the cauliflower well, removing the leaves and thick stem, but leaving the head intact.
Place the head of cauliflower in a deep microwaveable dish with the stem part down, add water to cover.
Microwave on high for 8 to 9 minutes, turning, after 4 minutes.
Let stand for 3 minutes and then remove the water.
Combine the mushrooms with the butter in a 1.5-liter microwaveable saucepan. Cook on high 2 minutes or until mushrooms are tender, stirring after 1 minute of cooking.
Stir the flour with the salt, the parsley and the milk. Microwave on high for about 1.5 to 3 minutes, taking care to stir after each minute, until thick.
Add the cheese to this mixture and mix well, cook at high temperature for 15 seconds, to melt the cheese. Mix in the sour cream.
To serve, place the cauliflower on a tray and pour this sauce over it. This recipe makes 4-6 servings.
Cauliflower in lemon sauce
Ingredients
1 medium head of cauliflower.
1 1/2 cup of water.
½ cup of skim milk powder.
1 tablespoon of butter or margarine.
2 cloves of garlic.
2 tablespoons of parsley.
1 tablespoon of lemon juice.
2 tomatoes.
Preparation
Clean and disinfect vegetables.
Finely chop the garlic and parsley. Extract the juice of a lemon without seeds and slice the tomatoes.
Remove the outer leaves of the cauliflower and the stem, without mistreating the head.
In a large saucepan place the head of cauliflower, add the water and milk powder. The latter will prevent discoloration.
Bring to a boil over high heat, reduce color, and simmer over medium heat until stem is tender, about 15 minutes. Drain the cauliflower and reserve on a tray.
In a small pot melt the butter, add the garlic, parsley and lemon juice mixing well.
To serve , pour the sauce over the head of cauliflower and arrange the tomato slices around it for an attractive look. This recipe makes 6 servings.
