Ingredients

Preparation of yolk glories

1. Now, place the almond flour with the condensed milk in a large container.

2. Once well mixed, place the water with the sugar in a saucepan over high heat. We mix well to dissolve the sugar.
3. Then, with a thermometer, we wait for it to read 115 degrees and remove it from the heat.
4. With the syrup ready, we add it to the almond mixture, in the form of a thread, until everything is completely integrated.
This will result in a soft but moldable dough.
5. Wait for it to warm and add the butter, mixing until it is completely integrated.
6. Next, remove from the bowl and place on a rack to sprinkle the yolk glories with icing sugar. Do not forget to cover with transparent paper until it finishes cooling.
7. Now, stretch the dough to a thickness of 2 millimeters. With the help of a cutter, take out the shape of circles.
Make sure the cutter is at least 3 inches in diameter. Cut as many circles as the dough allows.
8. Flour a tray that can go to the oven and begin to assemble the yolk glories.
