Ingredients

  • 350 grams of desalted cod

  • Salt

  • 15 piquillo peppers

  • 2 tablespoons of flour

  • 1 teaspoon of sugar

  • 1 onion

  • 200 milliliters of fish broth

  • 1 clove garlic

  • 300 milliliters of whole milk

  • Olive oil

  • 100 milliliters of white wine

Preparation

  1. We fill a pot with cold water and place the cod.

  2. We bring to a fire to boil, when it reaches this point we just remove and let it cool for a few minutes.

  3. When it has tempered, strain to remove the pieces of cod that we must then crumble.

  4. Then, in a pot we place a little oil with grated or sliced garlic.

  5. We bring to medium heat, until the garlic turns golden. At that point we add the cod and mix well with the garlic and oil.

  6. Let it cook for a couple of minutes and add a tablespoon of flour. Let it toast for a few more minutes and add the milk in small quantities, until we add all of it.

  7. While continuing to stir the mixture, we wait for it to cook. This will thicken the sauce over time. Don't forget to add a little salt.

  8. When it has achieved a creamy texture, remove from the fire and let it cool. Remember that it cannot be very thick, since when it cools it will become even harder.

With the cod sauce ready, it's time to fill the 12 peppers. To do this, you can use a pastry bag or a spoon as you see it becomes easier for you.

Pepper sauce

Now to accompany it, we will prepare a pepper sauce, in this case you must place a little onion in a pan with oil and bring to the fire to brown.

Once this point is reached we add only a tablespoon of flour and mix carefully so that the flour does not burn.

Then, we add the glass of wine and wait for the alcohol to evaporate.

When it has reached that point, add the fish broth and let it cook for a few minutes so that everything is properly integrated. Don't forget to mix.

Now, take it to the blender or with the help of a mixer and place 3 piquillo peppers next to two or three tablespoons of the sauce you are preparing.

Blend and return to the pot. Wait for it to cook for the sauce to take shape.

Then, it is time to add the stuffed peppers, mix so that they integrate with the sauce and let cook for 5 more minutes.

Wait for the cooking time to finish and voilà! Delicious peppers stuffed with cod to enjoy with your meal.

You can reserve a mold that can go to the fridge with a preferable lid, if it is not covered with aluminum foil.
