Christopsomos Greek Bread Recipe Preparation

It should be noted that the preparation will not take more than 40 minutes, but the resting times mean that this recipe extends to approximately 3 hours.

1. We must begin by marinating the raisins with the cognac.

Do it at least 2 hours in advance so that they absorb the flavor well and hydrate properly.

2. Now, in a bowl place half of the warm water, the yeast along with 2 tablespoons of flour.

3. We stir until all the ingredients are well dissolved, and we wait for at least 10 minutes. This will cause the dough to begin to bubble.

4. Next, put the rest of the flour in a bowl. In the center of it we add the preparation of the flour with the yeast, the rest of the warm water and the warm wine.

5. Mix and do not stop until it is a smooth dough.

6. At this point, we integrate the rest of the ingredients and knead again.

If the mixture has been a bit unmanageable you can add flour little by little until the desired texture is achieved.

7. Afterwards, we leave the dough in a bowl and cover with a cloth. We wait for it to double, this should not take more than 2 hours.

9. Next, divide some dough into two equal parts. With the rest, make the bread.

10. With the parts that you have separated form two long rolls and create a cross shape on the bread leaving the ends out.

11. Now, place water in a ceramic or clay container, put it in the oven and heat it to 180 °C.

12. We introduce the bread, and we count 60 minutes for it to cook.

13. After the hour, we remove the water and wait for it to cook for 10 more minutes but at 200 °C.

14. Let it toast a little while we prepare the topping. To do this, you will need to beat the honey together with the lemon juice.

When the bread is cooked, we remove it from the oven and take it to a rack to cool quickly.

15. We apply a layer of honey and lemon juice to give it a shiny appearance.

16. To finish, sprinkle a little sesame seeds, we wait for it to cool completely. And that's it! We chop into slices to be able to taste it.
