  2. Place the potatoes in a saucepan with water.

  3. Put the saucepan on the fire and wait until the water is about to boil.

  4. Once it starts to boil, cover and wait for the potatoes to cook for three more minutes.

  5. When the potatoes are tender, drain them and rinse them with cold water.

  6. Let the potatoes rest until they cool completely. The idea is not that the potatoes are very soft, but that when you squeeze them they break a little.

  7. Once the potatoes are cool, place the chunks in a plastic bag, followed by a few teaspoons of cornstarch or cornstarch. Close the bag and shake so that the cornstarch sticks to the potatoes.
