South Korean Hot Dogs: The Perfect Kid's Dinner Food

Steps for making Korean hot dogs
Preparation of the dough
In a bowl place 12 grams of fresh yeast, or 4 grams of dry yeast. Next, add 170 milliliters of water and a tablespoon of sugar. Mix these ingredients very well.
Sift 200 grams of flour over the previous mixture.
Add half a tablespoon of salt and mix everything with a paddle until you get a homogeneous mass.
Cover the bowl with plastic wrap and let it rest until it doubles in size. This can take about an hour.
Processing of the potatoes
Peel and chop the potatoes into long strips, then cut into small, even pieces.
Place the potatoes in a saucepan with water.
Put the saucepan on the fire and wait until the water is about to boil.
Once it starts to boil, cover and wait for the potatoes to cook for three more minutes.
When the potatoes are tender, drain them and rinse them with cold water.
Let the potatoes rest until they cool completely. The idea is not that the potatoes are very soft, but that when you squeeze them they break a little.
Once the potatoes are cool, place the chunks in a plastic bag, followed by a few teaspoons of cornstarch or cornstarch. Close the bag and shake so that the cornstarch sticks to the potatoes.
Place the potato wedges with cornstarch on a plate.
Cheese preparation
Cut into a generous wide piece of cheese (preferably mozzarella).
Cut the piece of wide cheese into four pieces, and reserve to prepare the sausages.

Then pass the sausages covered by the pieces of potatoes with cornstarch. Use your hands to make sure the pieces stick to the entire length of the sausage.
Squeeze a little with your hands so that the potato pieces stick well to the dough.
Pass the sausages through the breadcrumbs and finish covering the entire surface of the sausages with your hands.
Repeat this same process with all the sausages that you are going to fry and let them rest on a plate before frying them.
Fry korean hot dogs
Place a frying pan on the heat and pour plenty of oil (it can be normal, sunflower or olive).
When you notice that the oil is hot, very carefully, place the hot dogs to let them fry. In this step, keep the heat medium, not so high to avoid sticking or burning.
When the sausages are browned on the bottom, turn them over to fry the other side.
Once they are browned on all sides, remove the sausages and let them fry for a few minutes on the tip. This will also drain some oil.
Repeat this same process with all the sausages you have to make.
Place the fried hot dogs on a plate lined with absorbent paper to drain off any excess oil.
When serving, cover the sausages with a little tomato sauce and mustard.

Variations in the recipe
If you don't like to leave the pieces of potatoes whole, you can mash them with the cornstarch and after covering the sausages with batter, cover with a little mashed potatoes and fry.
If you don't want to make the dough, you can flatten a rimless sandwich bun and roll it over the sausages. You should also cover it with eggs so that the potato pieces stick together.
If you want a crispier batter, you can cover with beaten egg and pass the sausages through breadcrumbs again and then proceed to fry.
