Steps for making pepperoni pizza recipe
Note: Due to the length of this recipe, we will divide the preparation into several phases.
Preparation of the dough
Sift a cup of flour into a bowl and make a volcano with the mace. In the center add a cup of warm water, followed by an envelope of yeast and sprinkle a tablespoon of sugar and powdered milk in the surrounding flour.
Start stirring the water with the yeast from the center. Wait ten minutes for the yeast to take effect, covering the bowl with a clean kitchen towel and leaving it at room temperature.
Once the yeast has fermented, add half a tablespoon of salt and begin to knead with clean hands, adding a little olive oil to make the dough more manageable.
When you notice that the dough has become manageable, transfer it to a flat, clean and previously floured surface, to continue kneading until you obtain a smooth and manageable dough.
Keep kneading for 15 to 20 minutes so that the dough is flexible enough.
Grease a bowl with olive oil and place the dough in it. With the oil that remains in your hand, grease the dough a little and finally cover the bowl again with a clean kitchen cloth for ten minutes.
Preparation of the sauce
In a pot, place four tomatoes in enough water and a little salt, and boil covered until they soften.
Once the tomatoes have cooked through, place them in the blender, add the garlic and half of the tomato sauce or paste.
Turn on the blender and let them blend and blend well for at least 5 to 10 minutes.
In a pot add the two tablespoons of butter and two tablespoons of olive oil, and then pour what we have just blended into the blender.
Season with salt and pepper to taste, together with the aromatic herbs of your choice.
Cover the pot and cook for about 25 minutes until the sauce is very thick. This may take a few more minutes depending on your cooking, but you'll know it's done when the sauce is really thick.
Before thickening the sauce, add the onion powder to taste and cover again to finish cooking. Finally, add a tablespoon of sugar to balance the flavor.
Assembling the pizza
When you notice that the dough has grown, it will be time to roll it out. To do this, flour a flat surface again and place the dough on it.
With the help of a rolling pin, spread the dough on the surface, until it is very thin.
Place the dough stretched out on the mold greased with oil, spreading very well and taking care that there are no uneven surfaces. Then, with a fork, make small holes in the dough in the center.
With scissors or knife, cut off the excess dough from the outside.
Cut pieces of mozzarella cheese and arrange them on the outer edges and then cover them with the excess dough, folding it towards the front and pressing with your fingers so that the edges do not fall apart.
Spread the sauce on the surface of the pizza with the help of a spoon, taking care that there are no white parts or exposed dough.
Spread a generous amount of both types of cheese on the surface. If you like, you can make a layer of one of the cheeses first and then a layer of the other.
Top with the pepperoni, arranged on the surface as you like.
Using a brush, paint the edges with a little olive oil to make it crisp.
If you like, you can add a little oreganillo to taste on the edges or on the surface for a more delicious touch.
Baking the pizza
Preheat the oven to 220º C for 10 minutes and when the pizza is put in, we lower the temperature to 180º C.
Bake the pizza for 20 minutes or until you notice that the edges are golden brown. In some ovens it can take up to 25 minutes.
Recommendations and Tips for a Perfect Pepperoni Pizza
It is best to let the dough rest near the kitchen, as this will help the heat to help the yeast work its way into the dough.
Before rolling out the dough, grease the tray where you will bake the pizza with a little olive oil.
