Meet and learn how to make the authentic bread pudding
Bread pudding is a sweet and smooth dessert, with a delicious appearance and perfect for being placed in the center of an elegant table. In addition, this is ideal to eat after dinner or as a snack, along with a little warm milk, or any other drink.
This dessert has some secrets to make it perfect, but it is not difficult to make. Here we will explain how to make it easily and with few ingredients.
Bread pudding ingredients
350 grams of hard bread (it can be the leftover that has been left in the refrigerator).
700 cubic centimeters of milk.
140 grams of sugar.
8 grams of lemon zest.
4 grams of orange zest.
350 grams of milk cream.
A spoonful of vanilla essence.
3 eggs L.
An egg yolk.
300 grams of sugar (for the caramel).

Steps for making bread pudding
Bread preparation
Cut the bread into small cubes. In case the crust of the bread is too hard, it is best to remove it so that the pudding is soft. However, if the crust is soft, leave it.
Place the pieces of bread in a large bowl and let it rest.
Preparation of liquid ingredients
Pour the milk into a saucepan and add the sugar, and then proceed to incorporate the zest of a lemon and orange. You can also incorporate any other elements that you like, such as cinnamon and vanilla.
Place the saucepan with the milk over medium heat and wait for it to heat up.
While the milk heats up, in another bowl place cream and a teaspoon of vanilla essence.
In a separate small container, crack three eggs and one yolk, and then add them to the cream.
Beat the ingredients in the bowl until everything is well combined. You can beat with normal or electric rods, as you like.
When the milk has reached the boiling point, add it to the bowl with the freshly whipped ingredients. Next, beat to integrate everything.
Finally, add the pieces of bread to the mixture.
Let the bread pieces sit in the mixture, so they get moist enough. This process can take from 2 hours to 12 hours, as you consider necessary. Keep in mind that the longer the pieces of bread rest, the softer the pudding will be.
Preparation of caramel for the pudding
Place a non-stick skillet on the stove over medium heat and add the caramel little by little, wait for the pan to heat up and the sugar to start melting. When the sugar starts to melt, add a little more.
Repeat the process of the previous step very patiently until you notice the end of the cup of sugar and achieve a blonde and dense caramel. However, be careful not to burn yourself.
When you have all the caramel ready, pour it into the pudding pan.
Move the pan so that the candy covers the walls. Remember to do it very carefully so as not to burn yourself. A good trick is to take it to the refrigerator beforehand, because with the cold pan, the caramel sticks faster to the walls.
Reserve the pudding pan while you finish making the pudding mix.
Preparation of the pudding mix
Remove the mixture from the refrigerator and then proceed to crush or blend it. You can do this with a blender or an electric mixer. If you want to do it manually, you can do it with a potato masher.
Pour the bread pudding mixture into the pudding pan. You must do this little, preferably with a ladle so that it does not overflow.
Pour a little hot water into a container larger than the pan and place the pan inside. Place both containers on a wide oven tray.
Baking of the pudding
Take the pudding in a bain-marie to the oven at 140º C for approximately 2 hours or until you notice that the pudding has curdled. A good option is to cover it with a metal plate so that it cooks evenly.
To check if the pudding is done, remove the metal plate and shake the pudding. If it is too liquid, you should let it cook a little more. Another option is to prick with a toothpick and if it comes out dry, it's ready.
When you notice that the pudding is curdled, remove from the oven and let it rest before serving. You can let it rest on a rack at room temperature.
After the pudding is at room temperature, cover with clear plastic wrap and place in the refrigerator until chilled.
Finally, place a plate on the pudding pan and turn it over to proceed to remove the mould. Ideally, you should do this in a deep tray or dish so that the caramel does not overflow.
Final decoration alternatives
If you like, place some fruits such as berries, cherries, strawberries or blueberries in the center to decorate.
If you prefer the smell of mint, place some sheets of blanket in the center, as a decoration.
For a sweeter flavor, opt to place a few pieces of chocolate in the center of the pudding.
If you are a nut lover, hazelnuts, peanuts or walnuts complement the bread's flavor very well, so it will be perfect in the center of the pudding.
If you want a more traditional flavor, try placing pieces of candied fruit in the center of the pudding as decoration.
