Steps to prepare the BBQ Ribs New York
Note: Due to the length of this recipe, we will divide the preparation into several parts.
Preparation of the ribs
Wash the pork ribs very well, pat them dry and place them on a board to begin the preparation.
Wipe off excess fat and remove the meat skins from both sides of the rib. Likewise, remove the membrane that is attached to the bone. This is very important, because if it is not removed, it will prevent the marinade from penetrating the meat.
For the rib marinade
In a large enough tray, pour the cups of orange juice. Add the black pepper and thyme. Mix well with the bay leaves and garlic powder. Let everything mix very well and add the two cups of water.
Place the pork ribs on the tray with the previous mixture and let it soak in very well. Let the ribs sauté for about four hours in the batter to allow the flavors of the marinade to penetrate the skin.
Preparation and baking of the ribs
Once the four hours have passed, we remove the ribs from the tray, dry and take them to the tray where later we will bake.
In that tray, we will add the white vinegar. Cover the tray with aluminum foil. This step is vital so that the ribs cook in their own juice and are soft, juicy and flavorful in the end.
Bake for one hour and fifteen minutes at 375º F.
Preparation of the base BBQ sauce
In a skillet over medium heat add two sticks of butter and let them melt.
Add half an onion, chopped into pieces and the equivalent of a clove of garlic, crushed or in paste, and salt to taste. Let them cook over medium high heat until the onion is translucent.
When you notice that the onions are golden brown, turn off the heat or keep it to a minimum.
Add the tomato sauce, and while adding it, mix, so that the sauce slows down cooking and neither the garlic nor the onion burn. Later, add half a cup of apple cider vinegar.
Mix very well, and add two heaping tablespoons of brown sugar. Then add a tablespoon of salt, a tablespoon of paprika, and a tablespoon of ground black pepper. Finally, squeeze the juice of half a lemon into the mixture.
If you want the sauce to be spicy, this is the time to add spice to taste.
Beat well over low heat for two minutes and then transfer the sauce to a blender and blend from the lowest speed to the highest for a couple of minutes. Ideally, it should be well blended and without lumps.
Return the sauce to the pan and place three tablespoons of it in a covered container and set aside.
Preparation of the traditional BBQ sauce
In a new skillet, sauté the rest of the onion and a paprika in a little butter. Later, add this sauce to the pan where you have the previous remaining sauce.
Add a cup of rum of your choice. We integrate well by mixing with the whisk and continue cooking over medium heat. Once well integrated, we add a tablespoon of Worcestershire sauce. Let the rum and the mixture cook for at least 10 minutes.
Mix the sauce well with the whisk and add half a cup of papelón in powdered panela.
Take this sauce to the blender and blend for a couple of minutes or until you notice that it no longer has lumps.
Preparation of the ribs with the BBQ sauce
Remove the pork ribs from the oven and remove the aluminum foil from the top. You will know that the rib is perfect when the tip of the knife easily penetrates the meat.
With the help of a kitchen brush, brush the ribs with the second prepared BBQ sauce, until they are perfectly covered.
Keep covering with the second sauce until perfectly coated.
Place the sauce-painted ribs on the oven rack, painted side down, and coat the other side with the sauce.
Bake for 5 more minutes at 420º F. When removing from the oven, turn them over, paint again with both sauces and return to the oven for 10 more minutes.
Remove the ribs from the oven and while it is hot, cut into portions and serve hot with its contour.
