  • 25 grams of oatmeal,

  • Vanilla essence,

  • 350 grams of fresh cheese,

  • 5 grams of yeast.

Step-by-step elaboration:

This preparation will take approximately 50 minutes, despite how simple it is.

1. Start by preheating the oven to 180 °C. Also, prepare a mold with wave walls, greasing or covering with kitchen paper.

2. Now, wash the raspberries, drain them well and dry them with a cloth or absorbent paper.

3. Separate the yolks from the whites both in containers. Beat the yolks together with the lemon zest, salt, vanilla and whipped cheese.

4. Add the sweetener, if it is of your choice.

Remember that the sweetener must resist baking, or it will lose flavor.

5. Then add the oatmeal and yeast, mixing very well.

6. If you want, you can add the crushed oat flakes with a whisk. This will give the mixture a fine texture.

7. It is then time to add the raspberries and mix gently.

8. Beat the egg whites until they are whipped to the point of snow. When finished, add them to the mixture with gentle movements so that they retain their volume.

The best utensil to incorporate the egg whites without losing their volume is a palette.

9. Now, pour the preparation into the mold. Top with raspberry pieces. And bake for 40 minutes or so.

This is a preparation that will allow you to obtain 6 servings in just 20 minutes of preparation. However, you must have a lapse of 2 more hours to be able to serve.

Oatmeal.

You will need to

  • 2 grams of agar-agar,

  • 5 milliliters of vanilla essence,

  • 500 grams of fresh cheese,

  • 500 grams of strawberries.

Preparation of the cheese and strawberry mousse:

1. The first thing is to clean the strawberries well and dry them very delicately.

2. Remove the green part, chop them and weigh half a kilo.

3. Now, mash the strawberries with the help of a chopper or a whisk, so that you have a cream or strawberry purée.

4. Next, add the skim cheese, whipped and drained. With the help of the whisk, stir a little more.

Also, you can use some plain or Greek yogurt as long as it has a creamy texture.

5. Next, take the agar-agar and heat a pot over low heat. Wait until it reaches the boiling point.

6. And place at the base of the molds, cups or glasses where you are going to serve.

7. Wait a few minutes for it to cool down. Place the rest of the preparation in the molds and put it in the fridge.

8. Leave in the fridge for about 2 hours until it takes texture, at least 2 hours.

Agar-agar is a delicate product to treat, so it is recommended that you follow the instructions that come on the package. These can vary from brand to brand so do not trust yourself.

An ingredient that can vary is the use of gelatin, more or more about 9 sheets to hydrate or if it is in powder it must be more than 2 grams of gelatin to achieve the creamy texture that is desired.
