2. Let it boil without stirring.

3. When you see that the edge of the sugar is changing color, move so that the whole mixture takes this color.

Make sure it does not turn black as its flavor would be very bitter. Consider then that the temperature of the preparation should not reach 200 °C so that it does not burn.

4. When all the mixture takes an ocher color, remove from heat.

5. Now, add the cream. This will create a few bubbles at first. Let it go down and with a trowel, incorporate the ingredients well.
