1. To start you have to repair the water bath.

2. Then a pot with half water is required and place over high heat to bring it to a boil.
Likewise, you will need a bowl that can be placed over the pot and withstands the heat. This is where we will prepare our sauce.
3. Continuing with the preparation, while the water is boiling, place the butter in a frying pan over low heat so that it melts.
4. In another container, beat the yolks with three tablespoons of water, until it becomes foamy.
5. Once the water has boiled, place the beaten egg yolks in the bowl.
6. Then, we lower the flame to medium heat and beat the yolks again until they have a thick texture.
You can help yourself with a manual or electric mixer that you have, just don't stop beating.
7. Once the sauce has thickened, remove from the heat and add the butter little by little. At no time should you stop beating.
8. Now, add the lemon, salt and cayenne pepper to mix everything very well.
9. When you get a homogeneous cream, place the cream in a container until it thickens without reaching the point of snow.
It is recommended in this step to take it with an electric mixer to shorten the preparation time.
10. Once the cream was assembled, we incorporated it into the mixture and with a trowel we joined with enveloping movements.
11. By joining all the ingredients we are ready to serve.
Recommendations when serving.
You must serve at the correct temperature, that is, hot but not boiling because the yolks may crack.
At the time of heating you can use a pot directly, but as a recommendation do it in a water bath so that it does not burn.
If this happens at the time of heating, remove the pot from the heat, add ice cubes and mix with quick movements, and you will have the desired texture again.
Recipes with muslin.
Different ingredients can be added to this sauce according to your taste. Among the possible combinations are asparagus or prawns, which will allow you to cook chopsticks such as:
