How to prepare the best Ratatouille?
One of the traditional French foods is ratatouille. This wonderful dish has become very famous, so much so that the whole of France spends time preparing this recipe.
Most likely, when you see the Disney movie Ratatouille, you can already have an idea of what this recipe is about. Despite being simple, do you really know how to prepare the best ratatouille ?

About the ratatouille
Its preparation is not very complicated, since it is only a combination of vegetables that can be cooked in different ways.

Preparation method
1. The first thing is to clean, peel and cut the eggplant into slices of approximately 5 millimeters. Then, put them in a colander, add salt to each slice, and we continue.
We do this so that the aubergine changes the bitter taste it has.
2. Now, you must repeat the process with the other ingredients, but without applying salt.
3. Then, it is the turn to mince the garlic and preheat the oven to 180º C.
In this particular, we will take the preparation to the oven, so you must locate a mold or source with high edges and of a size that allows the slices to remain vertical.
4. You must grease the walls of the mold to prevent the preparation from sinking.
5. Now, you must place the slices of the vegetables one after the other, with the intention of forming a spiral throughout the base of the mold. Do not forget to alternate the vegetables, so that the final result has a striking color.
6. Next, prepare the dressing by mixing the garlic with 4 tablespoons of the oil and the herbs. Sprinkle it with a little salt on the vegetables already arranged in the source.
7. Bake, placing it in the lowest part of the oven, for about 40 minutes or depending on your oven, until the vegetables are tender. And that's it!
When you are ready, do not forget to serve on the plate with a little of the juices or the broth released by the vegetables.
Tips for a perfect ratatouille
Herbs
Regarding the herbs, remember that they must be from Provence, you can get them in a mixture in supermarkets. If you do not get this mix, you can search individually for basil, rosemary, thyme, oregano, among others.
Vegetables
These vegetables should have firm meat. The peppers should have shiny skin and not be wrinkled.
Regarding the tomato you must bear in mind that if it is for the oven it must be firm, and it must retain its skin. While if it is to cook in the pot, they must be ripe and without the skin.
Cooking
This preparation should be tender. The baked version may be easier, but you should be careful not to over-roast. You can even lower the heat of the oven a bit so that they can last as long as necessary.
Finally, let me say that this recipe is much better appreciated from one day to the next, since the flavors will have been fully integrated this way. It is ideal to prepare on Sunday and eat during the week.
