Ingredients

  • 10 brick dough wafers.

  • Sunflower oil to fry the wafers.

  • Sliced almonds.

  • Icing sugar to sprinkle

For the cream

  • 500 milliliters of whole milk.

  • 115 grams of sugar.

  • 1 small tablespoon of vanilla extract.

  • 3 egg yolks.

  • 35 grams of cornstarch.

  • 450 milliliters of liquid cream to mount (35% MG)

  • 50 grams of sugar.

Preparation method

It is recommended to prepare the cream in advance so that it can be refrigerated long enough before using. With that said, let's move on to the recipe.

1. We will start by boiling about 375 milliliters of the milk in a pot together with the sugar and the small spoonful of vanilla.

2. In a separate bowl, place the remaining milliliters of milk together with the egg yolks and the cornstarch.

3. Once the pot begins to boil, remove from the heat and proceed to add to the mixture in the bowl and stir until a homogeneous texture is obtained.

4. Once the mixture is ready, it is placed again in a pot over medium heat until the mixture thickens.

5. When the mixture is ready, cover it with transparent paper or plastic wrap, making it come into contact with the cream to prevent a crust from forming.

6. Wait for the mixture to settle before taking it to the refrigerator.

7. When the cream is already cold, proceed to mix it with the pastry cream and take it to the refrigerator again.

8. From this point on, place a little oil in a frying pan, the size of which our brick wafers will fit.

9. Wait for it to heat up to place the wafers for a few seconds on each side.

10. The ideal is to remove them when they are already golden, avoiding letting them burn. Once ready, place them on some absorbent paper to remove excess oil.

11. When they drain well, prepare the tray where the cake will be placed, then place a wafer and enough cream on it.

12. So on until the end, placing a wafer as the final cover and on top of it, the almonds, previously toasted in the pan, and a little icing sugar to decorate.
