  1. Wash the potatoes, peel them, and cut them into sticks. The thicker, the better.

  2. Place the potato wedges in a bowl of cold water to remove excess starch. Leave them there for between 2 and 5 minutes.

  3. Drain the potatoes and place them on a kitchen towel to remove excess water, and dry them with a napkin.

  4. Place the potatoes in a container or tray and spread the cornstarch on top, with the help of a strainer, taking care that all the potatoes are well covered.
