Vegan or vegetarian menus are a bit complicated to vary if you do not have enough experience, so in this article we will add an excellent recipe for stewed vegetables with spinach meatballs so that you can enjoy a new dish.

For the preparation of these we will use spinach and one of the tastiest and most recognized Italian cheeses: Parmesan. An ideal dish for any vegetable lover.

Ingredients for stewed vegetables

  • 1 onion.

  • 1 Leek.

  • 1 bulb of fennel.

  • 2 Parsnip.

  • 1 bunch of sage.

  • 3 garlic cloves.

  • 300 grams of pumpkin.

  • 400 grams of potatoes.

  • 400 grams of whole canned tomatoes.

  • 1 teaspoon of sweet paprika.

  • 750 milliliters of vegetable broth.

  • 2 teaspoons of olive oil.

  • Salt and pepper.

Ingredients for the meatballs

  • 250 grams of spinach.

  • 100 grams of grated Parmesan cheese.

  • 50 grams of butter.

  • 2 eggs.

  • 100 milliliters of milk.

  • 2 teaspoons of flour.

  • 1/2 teaspoon grated nutmeg.

  • Salt and pepper.

Preparation of stewed vegetables

  1. Clean all the vegetables and let dry.

  2. Peel and dice the onion and garlic cloves.

  3. Cut the leek into rings , only the white part. Dice the fennel.

  4. Peel, wash and chop the parsnips. Keep the sage on hand.

  5. Remove the shell, wash and dice the pumpkin and potatoes.

  6. Bring the oil to a saucepan over high heat and sauté the garlic and onion for three minutes.

  7. Add the leek, parsnips, fennel, sage, and potatoes, a touch of salt, pepper and paprika and mix everything very well.

  8. Pour the broth and keep on medium heat until it boils.

  9. After boiling, add the pumpkin and tomato, mix. Lower the heat and let everything cook for about 10 more minutes.

Preparation of the Meatballs

  1. Wash and let the spinach dry, then you can chop it.

  2. Meanwhile melt the butter and set aside until cold. In a small bowl, beat the eggs well.

  3. In a pot put the spinach together with the Parmesan cheese, the flour, nutmeg, salt and pepper and start mixing.

  4. Then add the butter, milk, eggs until you have a uniform mass. You can add more milk or flour if you think it is necessary to achieve the texture.

  5. Flour clean hands, to form the balls, which you can add to the stew directly, but if not, prepare and put them on a tray and incorporate them when you finish.

  6. Placed in the pot , let it cook over low heat for 15 minutes.

  7. Serve in deep plates, the meatballs with the vegetable stew.
