The number of recipes, including typical dishes, is very extensive, each region gives it its distinctive contribution, but if you want to feel the pure Mexican flavor in a short time, I recommend these 3 Mexican food recipes.

1. Pork carnitas tacos

Quick and Easy Mexican Food Recipes: Pork Carnitas Tacos

Pork is one of the most used meats in Mexican food and even its lard is used for the most delicious recipes.

This time we can enjoy it in some carnitas tacos and here I will show you the easiest and fastest way to make them. For this you need to have the following ingredients:

For the carnitas

  • 1 ½ kg of lard.

  • 1 kg of pork rib.

  • 1 kg of pork loin.

  • 1 cup of evaporated milk.

  • ½ orange.

  • ½ cup of orange juice.

  • 3 garlic cloves.

  • ½ onion.

  • 2 bay leaves.

  • 1 sprig of rosemary.

  • 1 sprig of thyme.

  • ½ tbsp whole peppercorns.

  • Salt to taste.

Assembling the studs

  • Corn tortillas.

  • Finely chopped white onion.

  • Finely chopped coriander.

  • Lemon juice.

  • Green sauce for tacos.

Start the preparation of the meat in a pot; if it is pressure better, over medium heat. There you will place all the lard, let it melt and then integrate the meat cut into pieces at least 1 cm thick.

At this point, bring the heat to a high level and add the evaporated milk, the orange piece, the orange juice, the aromatic herbs, the onion piece in large pieces, the pepper, the whole garlic and, of course, season with salt..

Cover the pot, and let it boil for at least 1 hour, or until the meat is extremely soft.

After this time, remove the pieces of meat from the pot and cut them into very small pieces or shred them with a knife and fork.

Once we have the meat ready, we move on to assembling the tacos. On a plate, take a corn tortilla and spread it out, place a portion of carnitas on it and add a little onion and chopped cilantro, along with a splash of lemon juice and taco sauce.

You can store the meat in this state in the refrigerator and eat tacos whenever you want.

2. Red Pozole

Red Pozole from traditional Mexican food recipes

Although it looks very tedious, it is one of the easiest Mexican food recipes to make.

A kind of hearty stew that contains the most impressive flavors of pork, hominy corn, and guajillo and ancho chili peppers.

In case you can't get the hominy corn, this recipe is an easy and practical alternative for this dish.

The ingredients for this preparation are:

for the meat

  • 3 pounds of pork shoulder or pulp.

  • 10 cups of water.

  • 6 large garlic cloves.

  • 1 onion.

  • 2 cubes of chicken broth.

  • 2 bay leaves.

For the pozole

  • 2 cans of 425 g of white corn.

For the red chili sauce

  • 4 ancho chili peppers, clean without seeds.

  • 4 guajillo chilies.

  • 4 large garlic cloves

  • 1 white onion.

  • 6 cups of water.

  • ½ tsp ground oregano

  • Salt to taste.

Let's prepare the meat, and for this a pot is required, to which you will add the water, the meat, the whole onion, the whole garlic and to season the bouillon cubes and the bay leaves.

Take it to maximum heat, cover the pot and let it boil for at least 3 hours ; however, using a pressure cooker will reduce this time. At the end of the time you will get a sufficiently soft meat.

Now make the red sauce, to do this pour hot water into a container, and there you will submerge the chiles for 30 minutes. After this time, take them to the blender along with the rest of the ingredients for the sauce.

Return to the pot, uncover and remove the bay leaf, onion and garlic, then strain the sauce and pour it into the pot along with the drained soft corn. Mix well, rectify the salt and let cook for 15 more minutes.

After this time, serve and decorate with cabbage, radish slices, a slice of lemon, onion and finely chopped cilantro.

3. Chiles en nogada

Chiles in nogadas

Chiles de nogadas is one of the most exotic dishes in Mexico, and this is due to the sweet and salty nuances that coexist in harmony in a chile poblano.

The best thing is that it is one of the quick and easy Mexican food recipes to make, so it won't take long to taste it.

If you want to learn the recipe for chiles en nogada you need:

  • 1 pear cut into small cubes.

  • 1 apple cut into small cubes.

  • ½ tsp ground cinnamon.

  • ¼ tsp ground nutmeg.

  • ¼ tsp cumin powder

  • 1 pinch of cloves.

  • 1 tsp salt

  • ½ tsp ground pepper.

For the white sauce

  • 190 g of cream cheese.

  • 50 g goat cheese.

  • 2 cups of Castile walnut.

  • 4 tbsp of sugar.

  • ¼ tsp ground cinnamon.

  • ¼ cup sherry wine

  • ½ tsp salt

  • 1 ½ cups of whole milk.

  • 500 ml of sour cream.

For assembling the chiles

  • Poblano peppers without veins or seeds.

  • Finely chopped parsley.

  • Pomegranate seeds.

The first thing you should do is the meat, this will be the stuffing for the chili. To do this, take your cauldron over medium heat, melt the butter and brown the garlic a little, without toasting too much, integrate the onion and stir. Now add the meat and salt and pepper, stir for about 10 minutes.

Now without removing from the heat add the rest of the ingredients for the meat, mix well and let it cook for 5 more minutes. After this, remove from the stove.

Start making the sauce, to do this, take a blender and pour all the ingredients, blend well until you get a homogeneous consistency.

Now only the assembly remains, for this, take your plate, open the clean chili and fill it with the meat. Finish by pouring a little sauce on top and decorating with chopped coriander and pomegranate seeds.

There are no more excuses to enjoy Mexican food recipes, you will not find it faster and easier than these.
