Delicious Chicken stuffed with Vegetables
Do not let its name worry you, because stuffed chicken does not mean that it is a complex recipe And even more so if it is about making a stuffed chicken with vegetables like the one we describe below.
This is an elaborate recipe, but quite simple to make if you follow the steps for its preparation step by step.
For the presentation of this complete dish because in addition to the chicken meat it has vegetables, you can put some garnish to accompany it, for example potatoes, bananas are a good alternative.
To season the chicken:
1 boneless chicken of 2 kilos, 1 bay leaf, 3 large cloves of minced garlic, juice of 1 lemon and 2 large oranges.
For the vegetable filling
For the filling we will need 200 grams of crumbled soft soy cheese, 2 medium-sized carrots, 200 grams of peas, Salt and pepper to taste. You should also have ground garlic to taste and pepper.
Bone the chicken
The chicken must be boned, that is, remove the bones and leave the meat, for this we have to place the chicken down with the breast that rubs the table and make a slit along the back with the knife.
From one end of the breast begin to cut the meat very close to the bone slowly until reaching the other end; now you can remove practically all the meat from the bone and it will then be enough to make a final cut at each end to remove the breast. We separate from the central part of the skeleton and the skin.
At the same time, we separate the bones of the legs at the joints and remove them with the lateral cuts.
In a refractory ovenproof container you are going to place the boneless chicken. Season it with salt, pepper, lemon and orange juice. Add the bay leaf and garlic.
Let it rest in the fridge for approximately 2 hours covered with plastic wrap or in a container that allows it to be covered. It is recommended that you turn it over at the time.
Preparation of the filling
Use a bowl to grate the two medium carrots and the garlic cloves. Then add the chopped cheese to the bowl, add the 200 grams of peas. Add salt and pepper to taste.
Assembling the chicken
Take the chicken out of the fridge, let it rest for 5 min and begin the process of filling with the filling preparation that is in the bowl.
Use toothpicks to close the pieces and take to the oven, this should be preheated at a moderate temperature to hot 135 C for 45 min to 1 hour or until the chicken turns golden, be careful it should be cooked but juicy.
You can also check if it is cooking, turn off the oven and let it rest in it, but not more than 30 minutes as it can dry.
In all recipes there is always a variant at the time of its development, since it is you who will develop it and select the form that you consider the easiest and safest method to achieve the ideal preparation.
The ingredients for its interior are as varied as you think, just combine those that are to your greatest liking.
You could vary the vegetables used for the filling even if you do not like the tofu or you cannot find it, you can substitute it for 200 grams of cotaje cheese. You could also substitute peas for corn, spinach, green beans, or zetas.
Times in the kitchen are always estimates, and it is practice that will perfect them. Since it can vary according to the type of oven, and its conditions.
That is why, before removing the chicken from the oven, it is recommended to check its cooking. If it is covered for the first 40 minutes, you can prick it with a fork to see that the meat is soft and juicy and bathe it with its sauce.
So the remaining 10 minutes will only be that it takes a pleasant golden color and at the table.
