How to make a vegetable soup?
For the soup you will need:
1 liter of chicken broth
1 small onion,
1 medium potato
2 stalks of Spanish celery
1 tablespoon of parsley
½ tablespoon oregano
½ of salt
100 grams. Red beans
100 grams Pea
100 grams Cauliflower
200 grams spinach.
For the chicken broth
250 grams of breast,
3 liters of water,
1 chili pepper,
2 garlic cloves, salt
Preparation of the broth
Place the water and salt to taste in a covered pot over high heat. When boiling, add the washed and whole half breast, also add the chili pepper and the grated garlic cloves.
Let it cook for about 20 minutes or spend it being reduced to 2 liters of water. Remove the chicken and let it rest.
Vegetable soup preparation
The first thing we will do is chop the vegetables, the onion, the carrot, and we will chop them into not so thin slices.
The Spanish potato and celery are chopped into small squares of about 1 cm. Finely chopped parsley, washed tomato, remove the seeds and chop into 1 cm pieces. The cauliflower chopped into chunks, the spinach chopped into small pieces.
Once the ingredients are cut, place in a medium saucepan with a lid, the liter of broth that can be prepared the day before, that is, defrosted, or have previously prepared it.
Add the potatoes, cauliflower, carrots, onion, celery, parsley, and salt. Cook for 20 minutes. Then add the cooked beans and peas cover and cook for 10 minutes.
The estimated time is 30 minutes, if you already have the prepared broth, if not you must add this time.
