Cheesecake with strawberry jam
On previous occasions, we have talked about how to prepare a fruit cheesecake. This time we will make a cheesecake with strawberry jam, which will allow you to save a little time in the kitchen.
You can either buy it in the flavor of your choice or prepare it at home and I assure you that the result will be great. Do not forget that the cheesecake is usually accompanied by crushed cookies that help achieve a greater consistency.

For the filling
200 grams of sugar.
3 tablespoons of wheat flour.
250 milliliters of natural Greek yogurt.
250 grams of Maria type cookies.
80 grams of melted butter.
500 grams of cream cheese room temperature.
1 tablespoon of vanilla extract.
for the jam
2 cups of sugar.
½ kilo of strawberries.
¼ cup of lemon juice.
Step by step of the cheesecake with strawberry jam
Program the oven at about 180 ° C.
For the base
Take out the cookies and take them to a food processor to crush them.
When you have finished take them to a mold and mix with melted butter. In this way, you will obtain a dough that you must spread over the base of the mold.
It should be well spread and even. When finished , take it to the refrigerator for about 20 minutes.
For the filling
Then, in a bowl place the cream cheese, sugar and beat. Program at medium speed and process until the consistency is smooth.
At this point, remove the whisk and add the yogurt with a paddle.
In a separate bowl, place the eggs and beat just a little.
Now, add them to the previous mixture with the flour and the vanilla. Try to unify all the ingredients perfectly.
You are going to place all this on the cookie base. Support yourself with a spatula or tool that allows you to level the content on the base.
Take it to the oven, with a little water to cook for approximately 60 minutes.
For the homemade jam
If you have bought your favorite jam, prepare it so that it is at room temperature. But if you are one of those who likes to do things at home, here we show you how.
Clean the strawberries by removing the stem and the green part. Slice into very small squares.
Place in a pot and let it cook over low heat. The estimated time is about 25 minutes for it to thicken.
When this point is reached, remove from the heat and add the freshly squeezed lemon juice and wait until it reaches room temperature. You can place in a bain-marie, when it is a little warmer, and thus speed up the process.
At the end of the cheesecake cooking time, turn off the oven and wait a few minutes before removing.
Take it out, being very careful not to burn yourself, and wait the necessary time for it to cool down.
If you do it early enough, you can save a lot of time.
Assembling the jam cheesecake
When both preparations are cold, apply a good layer of jam on the cheesecake.
Then, cut into similar portions and enjoy this delicious cheesecake with strawberry jam.
As a final fact, keep in mind to stir the jam you bought well. This will prevent the liquid from spilling on the cheesecake when applying it and watering the base.
Ideally, it should be thick and consistent so that it stays in place. Therefore, if it is not as smooth as it should be, you can use a little gelatin to make it thick.
