This is a variant of the traditional Christmas cake or thread recipe, by including chocolate that enhances its flavor.

This fruit cake, traditional at Christmas time, dates back to Ancient Rome, which was made with raisins, pomegranates and pine nuts. Honey was added to this recipe in the Middle Ages, in addition to preserved fruits and spices, to create the dessert we know today.

Its consumption at first was not related to the Christmas holidays, but to the harvest of nuts, when they were prepared to be consumed the following year to ensure a successful harvest.

Later, due to the difficulty of acquiring its ingredients, its consumption was limited to the December celebrations.

The English brought the recipe to American soil and due to the success of sugarcane cultivation, it is low in cost, making fruitcake affordable.

Ingredients

  • 2 cups flour,

  • 1 cup of butter,

  • 1 cup of sugar,

  • ½ cup of cocoa powder,

  • ½ tablespoon of powdered cloves,

  • ½ tablespoon of salt,

  • 300 grams of dried fruit,

  • ½ cup of macadamia (nuts),

  • 1 cup of icing sugar,

  • 2 lemons,

  • 3 caramelized pears,

  • 2 caramelized apricots,

  • 5 caramelized cherries,

  • ½ caramelized orange,

  • ½ caramelized lemon.

Preparation:

  • Sift the flour.

  • Chop the nuts and macadamia.

  • Fillet the caramelized orange and lemon.

  • In a bowl beat the butter and sugar. When the mixture is homogeneous, add the flour with the cocoa little by little so that it is integrated.

  • Place the cinnamon, cloves, salt, macadamia and nuts, stirring continuously.

  • When the mixture is ready, pour it into a pan. Bake at 180°C for 40 minutes. After 30 minutes test cooking with a toothpick to remove.

  • Meanwhile, mix the icing sugar with the juice of 2 seedless lemons.

  • Take it out of the mold when it is at room temperature, and cover the pancake with the glaze and place the caramelized fruits to decorate the plate. And ready to serve!
