About the Ossobucco

The Ossobucco is called the meat that is obtained from the lower part of the calf's legs. It is usually accompanied by a fried tomato sauce or a cebolada sauce.

Also, it can be prepared in a pressure cooker to give a cockpit finish, or as a stew, which is the recipe that I bring below.

Ingredients

To obtain a portion for 6 people you must have:

  • 2 tablespoons of tomato sauce.

  • 4 cloves of garlic.

  • Salt and pepper.

  • 4 Osso buccos.

  • 2 onions.

  • 200 grams of mushrooms in the presentation you get.

  • 50 milliliters of odorous wine.

  • 250 milliliters of meat broth.

  • Fresh parsley.

  • 1 tablespoon of black peppercorns.

  • 2 bay leaves.

  • 4 carrots.

  • Wheat flour for flouring.

The preparation can take you at least 10 minutes and the cooking should have the time for everything to come together in a single flavor, at least for 1 hour.

1. Flour the ossobucco fillets with salt and pepper.

2. Then, take them to a pan with a little oil to brown them.

3. Now chop the onions and other vegetables. Take to a pressure cooker next to the aromatic wine.

4. Then, let cook until the alcohol evaporates.

5. At this point we incorporate the meat.

6. Add the broth, the garlic and the bay leaves. The broth should cover all the ingredients.

You must rectify the flavor of the broth, if it has been a little salty, you can when adding to the pot just add a part together with another part of water.

Preparation of the stew

If there is not enough broth, you can add water to complete. Just make sure you season properly.

On the other hand, you can give more flavor to the preparation with little artichokes, garlic sprouts and asparagus.

7. We stir and wait for it to cook for 45 minutes. At the end of the time, lower the heat of the flame and wait for the pressure to leave the pot before opening it.

This will allow the meat to be tender at its point.

8. With the meat ready, it is time to cook the mushrooms in a frying pan with just a little oil and a clove of minced or finely chopped garlic.

9. When the mushrooms are ready, sprinkle a little parsley and put everything in the pot with the meat.

10. Let it boil for a few minutes before serving. And that's it!

A delicious stew for everyone to taste. If you wish, you can accompany it with potatoes or yucca. According to your taste you can make them parboiled or take advantage of giving a little flavor by sautéing them.

Also, you can place a portion of rice or short pasta that adapt perfectly. It all depends on your taste and the mood you have to prepare. There are days when it looks great with slices of bread.
