Ingredients

  • 6 kilos of butternut pumpkin.

  • 3 cups of small marshmallows.

  • 1 cup of water.

  • ¼ cup of packed brown sugar.

  • 4 ounces of cheese.

  • ½ teaspoon ground red pepper.

Preparation

  1. Preheat the oven to 375 °F.

  2. Take out the cream cheese to warm it and cut into cubes.

  3. Wash well and cut the pumpkins in half. Don't forget to take out the seeds.

  4. Incorporate the pumpkins in a 15 x 10 x 1-inch pan, measured upside down.

  5. Add water to cover and bake or until they are tender. For approximately 40 minutes.

  6. Place the pulp in a container where you can puree it very finely.

  7. Add the brown sugar, cream cheese and red pepper. Combine the ingredients well.

  8. Incorporate the mixture into a 3-quart mold, previously sprayed with oil.

  9. Spread the marshmallows over the mixture. Then bake for 1 to 2 minutes to brown.

  10. Remove and let cool before chopping to serve.

Cooking tips

  • You can make the pumpkin mixture in advance, but no more than 24 hours, without adding the marshmallows.

  • At the time of serving, the mixture is baked covered for about 30 minutes. Then add the marshmallows uncovered until they look golden.

  • Important, when buying the pumpkin, that they are of the same size so that their cooking in the oven is uniform.
