Ingredients

  • Bread crumbs

  • Extra virgin olive oil

  • 500 grams of béchamel sauce

  • Salt

  • 2 eggs

  • 1/2 red pepper

  • 3 tablespoons tomato sauce

  • 1/2 glass white wine

  • 2 garlic cloves

  • 200 grams of prawns

  • 1 kilo of mussels

  • For the béchamel sauce

  • Salt

  • 500 grams of milk

  • Pepper

  • 40 milliliters of extra virgin olive oil

  • Bay leaf

  • 40 grams of flour

  • Nutmeg

Step by step of the preparation of tiger mussels

As we have mentioned, this preparation requires a béchamel sauce, so it is the first thing we will prepare before continuing with the presentation of the tiger mussels.

For the béchamel sauce

1. Prepare 500 milliliters of milk and place in a pot to boil with the bay leaf.

2. While we wait for it to boil, add the olive oil to a frying pan and let it heat up.

3. At this point we add the flour and let it toast for a couple of minutes.

4. When the milk has boiled, with a ladle take the cream that formed on the surface and take it to the pan with the oil and flour.

5. When you have mixed well, add the mixture to the pot of milk. Without stopping stirring, wait for it to thicken.

6. At this time, remove from the heat and add the salt, pepper and walnut. Do not forget to remove the bay leaf and wait for it to temper.

To prepare the mussels

Once the béchamel is finished, it's time to get the mussels ready.

7. The first thing to do is clean the mussels very well with cold water.

8. When you have finished, place in a pot to boil with a glass of water.

9. As it begins to boil, or you see bubbles forming on the edge or bottom, it is time to add the mussels.

Cover and wait about 3 minutes or until you notice that they begin to open.

10. When they have cooled a bit, remove them from the water, without throwing it away, and remove the mussels from the shell. Do not throw away the shells, clean them and put away for a moment.

11. Chop the prawns into small pieces as well as the mussels and mix them.

12. Now, it is time to mince the garlic, pepper and onion. Add the olive oil to a frying pan and fry, starting with the garlic, then the onion and finally the pepper, over low heat.

This should take at least 10 minutes. Remember that the idea is not that any of the ingredients are burned, but that they take a golden hue to give more sweetness and flavor.

Armed with tiger mussels

With the sauce and mussels ready, it is time to arm our delicious appetizer.

  1. In a pot pour the wine, add the mussels with the prawns along with half a glass of mussel broth and the fried tomato.

  2. Let cook for about 10 minutes over medium heat, this will allow the preparation to reduce and the flavors to integrate.

  3. With the reduced mixture, add the béchamel sauce so that the mixture is homogeneous, place the preparation on the mussel shells and refrigerate for approximately 1 hour.

  4. When the time is up, beat the eggs. Then, add an overflowing layer of breadcrumbs, the beaten egg and again the breadcrumbs over the mussels.

  5. Prepare a pan with olive oil and when it is very hot, begin to fry the mussels. When it is golden brown, place on an absorbent cloth to remove excess oil.
