Ingredients

The ingredients that I will give you below will serve you to serve two servings of this delicious dish.

  • 2 eggs

  • Bread of your choice.

Ingredients for the yogurt sauce

  • 270 grams of Greek yogurt,

  • 1 clove garlic,

  • 2 sprigs of fresh mint,

  • Salt to taste,

  • Black pepper to taste

Ingredients for paprika butter

  • 10 grams of butter,

  • 10 grams of hot paprika,

  • 5 grams of sweet paprika,

  • 2 grams of ground cumin.

Ingredients for herbal oil

  • 75 milliliters of extra virgin olive oil,

  • 30 milliliters of vinegar or white wine,

  • 1 clove garlic,

  • 2 sprigs of fresh thyme,

  • 1 cayenne pepper,

  • 6 sprigs of parsley,

  • 3 sprigs of fresh mint.

Preparation methods

Although it is complicated by the large number of ingredients and components, the recipe is extremely simple to prepare. We will use the order of the ingredients except for the eggs that we will prepare at the end, let's go there.

Preparation of the yogurt sauce

Before starting the preparation, we must place the yogurt at rest so that it separates the serum from it.

1. To begin, we remove the whey from the yogurt and place it in a bowl.

2. We take the garlic and grate it to later add it to the yogurt and start mixing.

3. Finely chop the mint leaves and add them to the mixture, adding salt and pepper to taste. We continue mixing until all the ingredients are united.

4. After this we let the mixture rest and put it in the fridge for 1 hour.

Preparing the paprika butter

1. In a small pot, place the butter to melt over low heat.

2. When the butter is completely melted add the peppers and cumin.

3. We gently beat the mixture to integrate everything and make it stay hot.

Herbal oil preparation

Before starting, if you don't want to prepare all the oil, you can set aside the amount you want to use.

1. Once the oil is separated, we will start by removing the seeds from the chili pepper and crush it in a mortar to later add it to the oil and mix.

2. We pass the garlic clove on the grater to add it and continue beating.

3. Chop the thyme, mint and parsley leaves and add them to the mixture, adding salt and pepper to taste.

4. Finally, add the vinegar or white wine, finish mixing and the herbal oil is ready.

Preparation of the eggs

1. We will use a pot with 1 liter of water in which we will add about 15 milliliters of vinegar.

2. Before the water reaches boiling point, with a paddle stir enough to create a swirl in it and add one of the eggs right in the center.

Then, breaking the shell to add it with this method will prevent the egg white from expanding.

3. After about 5 minutes we remove the egg and place it to drain. We proceed to repeat the same process with the other egg.

Dish preparation

1. Finally, to prepare the dish we will use a deep plate.

2. In this we will add about two tablespoons of yogurt as a base.

3. We place the egg right in the center of it and pour a tablespoon of herbal oil and a tablespoon of paprika butter.

4. Serve with the bread of your liking And that's it!
