Ricardo Chaneton, a Venezuelan chef, is currently considered one of the most important exponents of cuisine in Hong Kong.

The head of the Mono restaurant, he projects a Latin American flair, which helped him get closer to achieving a Michelin star.

Mono, has become one of the nine restaurants awarded with a Michelin star, in the city of Hong Kong and Macao, with a total of 52 winners.

This award is given to restaurants that have the Bib Gourmand distinction, which is related to high quality food, at affordable prices.

Constant work

Despite having a short career, since he started, Ricardo has not stopped working hard. Thus, it has passed through different restaurants worldwide. In France, he was at Mauro Colagreco's restaurant; in Spain, in the restaurant of the homonymous chef, Quique Dacosta.

Together with one of the most outstanding chefs of the century, the Argentine chef, Colagreco, strengthened his talent. Over the course of seven years, Chaneton was an integral part of the chef's kitchen. With him, he learned about international and French gastronomy.

In 2016, he was transferred to Hong Kong, because with his passion and discipline for cooking, he was selected to lead Petrus. He demonstrated his quality and knowledge when creating flavors of French cuisine.

While at Petrus, he came close to earning the Michelin star. However, a few months before receiving it, he resigned from the restaurant to start his project, Mono.

Latin proposal

In 2020, the doors of his restaurant were opened for diners. In the facilities, you can enjoy different combinations with French, Asian, Latin flavors. The special touch is the taste of Venezuelan food.

The chef tries to ensure that in each meal there is a leading ingredient and that the other elements of the dish are flavor enhancers.

This project has received multiple awards since it began. It is ranked 94th in the best chefs of 2020 according to The Best Chefs, 44th in the list Asia's 50 Best Restaurants of 2021, 63rd in the best Asian destinations for the Opinionated About Dining platform.

In an interview, the chef assured that it would be hypocritical if he says that he does not want a Michelin star, taking into account that it is a great recognition of his work.

After much effort, he managed to receive the most important award in the culinary industry, the Michelin Guide. Ricardo Chaneton, on his social networks, assures that this is a "prize for patience".

In the social networks of the restaurant, the team showed great joy and pride. Likewise, in a publication they assured that they are delighted to receive the first Michelin star, forming part of the 2022 Hong Kong/Macao Michelin Guide.

They assure that they will celebrate collective pride with the team and chef Ricardo. They also report that Ricardo is the first Venezuelan owner chef to receive the important award.
