3 recipes to prepare pudding with fruits
The delicious and special flavor of a rich pudding is one of the most popular flavors by some. Therefore, I bring you 3 recipes to prepare pudding with fruits.
For now, coconut, mandarin and oranges will be handled along with nuts. Remember that the combinations are to your liking.

Coconut pudding
Ingredients
3 eggs,
200 grams of butter.
½ teaspoon of salt,
60 grams of grated coconut,
200 grams of white sugar,
200 grams of white sugar
100 milliliters of coconut milk,
1 teaspoon vanilla,
100 milliliters of milk,
240 grams of flour,
1 tablespoon and ½ of baking powder.
For the sauce:
400 grams of dulce de leche,
2 tablespoons of liquid. Either liquor, water, whole milk or coconut milk.
How to make coconut pudding?
To start, take the salt, flour and baking powder. Mix them in a bowl. In another bowl we place the butter at room temperature, the sugar, the vanilla and the coconut oil until the butter changes color.
Now, mix and beat the 3 eggs. Then, mix in the butter until it is a smooth cream. In another container, join the milk.
Then add half the milk to the cream, alternating with half the flour. Likewise, add the coconut and continue alternating until completing the rest of the milk and flour. For this last stage, mix at low speed or with a paddle.
With the mixture already prepared, it is time to butter and flour a mold. Pour the mixture and bake at 170 °C for at least 40 minutes.
While the pudding is ready, prepare the sauce. Mix the dulce de leche with the chosen water. Before removing the pudding from the oven, do the knife test to see if it is ready.
If the toothpick comes out dry it is time to remove it from the oven. When you take it out, still hot, take advantage of applying the sauce. In this way, the cake will be juicy and fluffy.
Tricks for a perfect pudding
High speed handling or mixing is not recommended for best result.
The sauce should be applied with the hot drum, and let it absorb and add another little if you like it to remain with juice.
Mandarin pudding
If you want a slightly healthier pudding, this mandarin pudding is the perfect option. Since sugar is replaced by natural sweetener. Even the flour is from oats and not from conventional wheat.
In this way, it is ideal for people who are allergic to gluten. It does not take much time to prepare, and its preparation is less complicated.
Ingredients
4 eggs,
1 cup of oatmeal,
3 tangerines,
1 cup of cornstarch,
¼ cup of grated coconut,
14 sachets of stevia,
1 small spoonful of vanilla essence.
Step by step of preparation
Start by peeling the tangerines and remove the seeds. Add all the ingredients to the blender and mix until you get a consistent cream.
Prepare the mold, butter it and flour it. Now, pour the mixture and bake for 20 minutes over medium heat.
I wait for the knife or toothpick to come out clean and take the mold out of the oven. Decorate with yogurt or jam diluted in a little water so that the cake absorbs the juices.
Preferably it is from the same fruits that you have placed inside or a fruit that contrasts and enhances the flavor.
Almond pudding with orange
For this pudding you will need...
4 handfuls of oatmeal,
Lemon juice and zest,
2 eggs,
1 cup of sugar,
½ cup oil, baking powder,
½ cup oil
2 cups of whole wheat flour.
Preparation
To start, beat the eggs and sugar until the tip of the snow. Add the oil, juice and orange zest and mix everything.
Separately, sift the flour and baking powder. Little by little it incorporates with a palette and enveloping movement so that until obtaining a homogeneous mixture.
Add just 3 handfuls of chopped almonds and mix. Now, take it to the oven in a special pudding mold for 40 minutes.
The cream to apply can be made of cheese or with yogurt or with sugar and orange juice depending on the consistency you want.
To sprinkle with almonds and extra fine sugar to decorate. You can even place mandarin segments without the seeds to decorate. It is your creativity.
As you will see, these recipes are extremely simple, they take a few minutes in the oven to cook the dough. The sauce that you apply is to your liking and according to the event you want to cover.
It should generally be dry, meaning the pudding should absorb the juice, but it shouldn't remain. But it is a matter of taste. Like leaving the pieces of fruit inside the pudding or for decoration.
Even the recipe free of gluten and artificial sugar can be adapted to the others depending on the combination you want to make.
Also remember that you can get the natural sweetener by infusion and or with commercial sachets. If you opt for the infusion, consider that the water you use is stevia.
