Ingredients

For the cake

  • 12 grams of sucrose,

  • 3 egg yolks,

  • 250 grams of all-purpose flour,

  • 250 grams of natural yogurt,

  • 5 egg whites,

  • 1 tablespoon of baking powder,

  • 2 lemons with their zest,

  • 2 tablespoons of vanilla,

  • 3 tablespoons of corn oil.

For decoration

  • 4 tablespoons of coconut milk,

  • 1 gram of sucrose,

  • 6 tablespoons coconut oil

For preparation

1. Take the egg yolks and place them in a bowl. Add a natural yogurt, vanilla and the zest of a single lemon.

2. Now, mix with a whisk until all ingredients are evenly united. Add the sucrose or the sweetener of your preference that withstands the heat.

3. Mix well and add the oil. Olive oil is not recommended for this recipe, as it would change the flavor of the recipe. Finish joining the ingredients to continue.

4. In a separate bowl, place the egg whites with 2 grams of sucrose until they are stiff.

5. When you've reached this point. Take a bowl and sift all the dry ingredients, that is, the flour and the baking powder.

6. To the first mix add the beaten whites, just half and incorporate with enveloping movements. Then add half of the flour following the previous movements so as not to lower the air to the egg.

Finish adding the whites and the other half of the flour. This step takes time and patience, it is necessary not to beat too much, but it is not necessary to leave pieces of egg whites free, since their flavor is quite noticeable when cooking.

7. When you have the mixture ready, grease a mold. It may well be a rectangular one to make square shapes or a mold for smaller cupcakes.

8. Then, place the waxed paper, and serve the preparation. Without hitting the mold, help with a trowel to get the mixture to all corners.

9. Bake at 160 °C for about 20 pampering or less. With a toothpick make sure the cake is well cooked. Once ready, remove from heat and let cool before unmolding or chopping.

10. If you have chosen the cake pan, cut the tip so that they are flat and can be stopped when unmolding.

Fronting Preparation

1. In a heat-resistant bowl, serve the coconut oil and bake for 7 seconds.

Rectify that the oil is well melted.

2. When it is, add the sweetener and mix well.

3. Do this until you notice that the mixture is thick. At this point add the coconut milk until you get a fronting texture.
