100 grams of Serrano ham (raw).
140 grams of eggs, (two cooked eggs).
50 milliliters of oil.
250 grams of onions, finely chopped.
2 garlic cloves, finely chopped
A few sprigs of parsley, finely chopped.
1 glass of white wine
1 egg.
Salt and if you want you can add a touch of pepper.

Before starting the preparation of our dumplings, we must have everything previously ready and in advance, such as the dough, the filling and all the utensils to use, such as forks, plate, pot, among others.
The oven must be preheated 15 minutes in advance.

Next, heat the oil in a frying pan on the fire, add the chopped onions, minced garlic and parsley, and when the onions and garlic are golden brown, add the meat, ham and cooked eggs, finely chopped.
Sauté everything together, add a small watering of wine to give it a good flavor, add salt to taste, and cook until the liquid has evaporated.
Preparation of our meat patties:
Roll out the dough with a rolling pin, on a floured work surface so your dough doesn't stick to the surface. (use whatever wheat flour is necessary).
Fold it two or three times, spreading it out again, until it is very smooth and leave it with a thickness of about 3 millimeters.
Pour a tablespoon of filling over the dough.
Form a dumpling, pressing the edges so that the filling does not come out. Cut the unnecessary dough and place the prepared dough on a floured baking sheet so that it does not stick.
Go forming pasties and when you have finished spread them with a brush dipped in the egg, previously beaten, this will give it a golden color.
Finally, put them in the oven, previously heating at medium temperature, until the dumplings are well cooked and crisp.
Serve hot, garnishing the platter to your liking.
