  3. Incorporate, very slowly, the boiling milk (previously strained), mixing continuously, so that the mixture is homogeneous and does not form lumps.

  4. Pour the mixture into a saucepan and put it over low heat, letting it boil, stirring constantly, for 7 to 8 minutes.

  5. Remove the dogfish from the heat and let it cool.
